Easy Red Beans and Rice

Very tasty! This has become a weekly regular at my house. Makes a filling lunch and a rather simple dinner. Sometimes I skip the sausage and its still very good. I also think it benefits from some celery sauteed with the other veggies.

Argentinean Chimichurri

Ive never had a traditional Chimichurri before, but I found this dissapointingly simular to a salad dressing. However, it was very tasty on the meat as well as our caulifower.

Very good, although I didnt use rosemary (none on hand) and I used the baking method. I chose to broil them for an additional 7 minutes and they came out great. The sauce in the pan was thin and broiling it fixed that.

This was so easy and fast its sure to be a new staple in my home. The flavor was amazing and its easy to see why its called a comfort food. Next time though, ill be sure to use fresh mushrooms (or soak them longer) and Ill probably use less sugar to make it healthier. Also, I just let the chicken cook a little while I prepped the veggies, then shredded it with my fingers. Saved the raw chicken/cutting board mess, but no big deal.

Japanese Ginger Pork

The pork was so tender! It absolutely needed double the amount of ginger and a little more soy. I served mine over a little bit of sticky rice and lots of shredded cabbage as suggested. Very nice.

Very good! The meat mixture definitely needed fresh ginger and pepper though. This recipe made more than I expected, which is good. Lots of left overs!

Swiss Chard with Garbanzo Beans and Fresh Tomatoes

I didn't have shallots or green onion, so I just used regular onion and cooked it down a little more. It was very good! I liked it cold with crusty bread for lunch the next day even more.
