Roasted Red Pepper and Avocado Sandwich

My three star rating is partially my fault. I used a ciabatta roll instead of a loaf and therefore the bread portion was way too thick for the contents of this sandwich. I think a grilled portobello mushroom would be a delicious addition to this sandwich. I will make this again and try that.

Beef Filets with Ancient Grain and Kale Salad

Just okay. In my opinion, filet mignon should always be grilled, but if that is not an option then you can broil. I used Campbell's regular beef broth because that is what I had and it was to weird tasting for me. Maybe the reduced sodium (as listed) makes a huge difference but I think you could use a chicken broth to cook the farro grains, but at least get a high quality broth. Unless you really like kale, use anther lettuce. Also, I think the beef needs more seasoning than what this recipe calls for.

Beef and Couscous Stuffed Baby Bell Peppers

This makes for a great appetizer if you use the baby bell peppers. My family liked this, and I will make again, but next time will use regular sized peppers. I did use ground sirloin with this and a three cheese combo of Parmesan, Romano & asiago.

These were just o.k. I will say they tasted better the next day. I wasn't crazy using the pre-made pie crust, it was just too thick.

HERDEZ® Enchiladas Suizas

This was very good. I did grill the tomatillos about 8 minutes PER side but that may be due to my grill. My son said, "I love everything about this!" My husband said, "The fire roasted tomatillos and the different cheeses make it great!" This made about 12 enchiladas which filled the 8 x 12 pan.

Sauza® Raspberry Margarita

We thoroughly enjoyed this drink and will most definitely serve this again. We did use our Ninja blender to mix the ingredients with ice and whipped it up really well to a good froth. We also used the margarita mix that has to be refrigerated and has an expiration date. It is better than the kind the you do not have to refrigerate and I believe makes a difference.

Argentine Meat Empanadas

My family loved them. I did, however, substitute Johnsonville Italian Sausage for the ground beef which gave it a more chorizo taste. I did not use shortening but vegetable oil instead. I added 2 cloves of minced garlic, used less paprika and added some oregano and pepper and I left out the raisins. I used pastry discs from a local Mexican market. I fried ours in vegetable oil until lightly golden brown. Fun to make!

Italian Wedding Soup

Great tasting soup. I used a bit more spinach than called for. Due to the meatballs it was a filling soup and can be used as an entree with a load of home baked bread.

Johnsonville Easy Sausage Pizza

Easy, tasty and fast! I loved the Johnsonville mild Italian sausage. I fried mine first to remove some grease. I like sausage with that crispiness on the outside anyways. I kept eating the sausage as I removed from pan because it was so good! I will definitely make again! I'm giving the recipe 4 stars but I give the sausage 5 stars!

I may make again, but it was a "busy" dish. If I were to make it again I would change step 5 and first make a roux because there was a lot of liquid and no real creamy sauce.

Easy Pressure Cooker Pot Roast

Absolutely loved this recipe! No doubt I will make this again. The only difference was I used a can of beef consomme instead of beef broth. I used a sweet onion and it was sooo good. Next time I will put more sweet onion in the mix. I love pressure cooker recipes. HUGE time savers!

I followed the directions but it would have turned out better if I would have prepared it like I usually do. I should have sauteed the onion and celery in butter not boil them. Like others said, it needed more broth.
