Creamy Alfredo Potatoes

I made this with a roast and it was a nice change instead of mashed potatoes. I added extra green onion and next time I make it I will add even more! The overall flavor and texture reminded me of a baked potato with all the fixings. Very good!

Baked Ziti with Cheese

Just okay. I used regular fresh mozzarella, not buffalo mozzarella. The cheeses are sooo good on their own, but the finished dish was not worth the cost of the cheeses in my opinion. Too bad because I really wanted to like it.

Mexican Sushi

A fun appetizer for anytime! Except for the cream cheese mixture, I added each ingredient in rows parallel to the direction I was rolling them up. (see picture I added)I think it makes a cleaner appearance after cutting them. Hope that makes sense. Roll them very snug to eliminate gaps between the ingredients and make sure your knife is sharp so you don't tear the tortilla when you slice them.

Creamy Pea Soup

This is "thinner" than other split pea soups I have made before, but it is smoother and creamier where others are much thicker. I'm thinkng it will be the perfect consistency on the second day. We shall see. I didn't have any carrots or celery so I substituted frozen carrots and peas from a bag and celery salt. I also tossed in one chicken bouillon cube 'cause I like to live life on the edge. Turned out yummy!

Sarah's Applesauce

With my changes I give it 5 stars. I used 11 Gala apples, 1.5 cups of water, 1/4 cup sugar and 1/8 teaspoon cinnamon cooked it longer too, on low heat. After mashing with my potato masher, my immersion blender worked like a charm to bring it to just the right consistency.

Amazing Muffin Cups

We liked these muffins but for our taste we needed to add sriracha sauce to them to spice them up. The muffin texture reminded me of quiche. I think these are prefect for a quick breakfast before school or a luncheon.

Chicken Cordon Bleu I

First off, I substituted the ham with some Johnsonville Mild Italian sausage. We enjoyed the added zing. It was a bit more difficult to wrap them up using the sausage vs. ham, tho. It took longer for the chicken to get 165 degrees so next time I think I would slice my chicken breasts thinner to help make the rolling up easier and the cooking faster. I pounded the heck out of mine and they they were still too thick. I forgot to make the sauce others recommend. I think it would be even better with the mushroom sauce.

Ground Beef and Cabbage

This recipe, with my substitution of Johnsonville mild Italian sausage, rocked it! Not only was it delish, but it was fast and SUPER EASY!!! I did use two cans of diced tomatoes as others suggested. My kids rolled it up in a flour tortilla, but the hubs and I ate it from a bowl and knew the calories would be minimal without the carbs. Will I make this again? Absofreakinlutely!

Sweet and Spicy Salmon with Grapefruit Salsa

My family liked this dish. I used fresh ruby red grapefruit. It does take some time removing the membrane from the white fibrous sections so to save time you could buy jarred grapefruit. We did not eat all the salmon so we had leftovers. My son said it tasted even better the next day.

My whole family loved this dish. I used lemon lime soda instead of the ginger ale. I served over mashed potatoes. I cooked on the low setting for 6 1/2 hours. Outstanding!

Thanksgiving Leftovers Casserole

This is the best thing to make with your left-overs! After all that cooking on and leading up to Thanksgiving, the last thing I want to do for a while is cook! Ah hell nah!!! Throw this little jewel of a casserole together right quick and kick yo' feet up girlfriend and enjoy the rest of the holiday weekend.

Mandarin Orange Cake II

I agree with other reviews about adding the oranges at the end and then folding them in. I added about 3-5 drops of orange oil (not extract) to bump up the orange flavor. It still needed more orange flavor and I wished I would have added more. I purchased my oil at a cooking utensils store since they usually don't carry it at grocery stores.
