Pork Chile Verde

Reviewed: Aug. 1, 2015
This pork chile verde recipe is absolutely delicious! I am familiar with the dish, but I was concerned with the jalapenos peppers this recipe calls for making it too spicy. No worries needed, this had just enough "kick". I do recommend wearing disposable cooking gloves when you clean the jalapeno peppers to protect yourself from any accidental encounters with their lingering burn! Their aroma alone made it a bit uncomfortable to breath while cleaning and chopping them, but oh my, they were worth it! I thought the size of the cut vegetable in the end product might be too big, but they were perfect! I could not find the Swanson Mexican Tortilla broth anywhere, so I just used regular Swanson Chicken broth. Yummy!

Angie's Perfect Dinner Rolls

Reviewed: Jun. 3, 2015
A lot of waiting around for too many rises for rolls that didn't fluff up as much as shown in pictures and they taste weird to me. The first rise also took much longer than directions state I also had to coat my hands in flour so dough wouldn't stick to them.

Triple Dipped Fried Chicken

Reviewed: Jun. 2, 2015
My family liked it, but next time I will use way more spices like others suggest. Chicken breast naturally doesn't have that much flavor (in my opinion) on its own so next time I will season chicken overnight or brine it first. I needed to add some beer to second batter after coating half of chicken because it became too thick from first few pieces being dipped. Adding the beer helped keep subsequent chicken pieces crispy and light. I also "sifted" out the doughy pieces that accumulated in the dry mix and that helped too.

Pistachio Cake IV

Reviewed: May 31, 2015
Great recipe just use 1/4 oil and 1/2 teaspoon of almond oil. I also added 5 drops of green food coloring to pistachio batter. I also placed batter into more of a checkerboard configuration inside bundt pan, instead of just straight color layers, and then I made some zig zag "swirls" through batter.

Easy Slow Cooker Ropa Vieja

Reviewed: Jan. 13, 2015
I loved it! My husband and kids said it was just okay. Ingredients list says cut flank steak into thirds, but in instructions it states to use half of steak. No biggie, but it should be corrected. Served with white rice and black beans.

Three Cheese Tortellini with Traditional Sauce and Parmigiano Cheese

Reviewed: Dec. 31, 2014
For others mentioning that they like home made better, well that's to be expected of most pre-made foods in my opinion. That being said, this is a decent quick dinner. Don't forget the basil leaves and use some good cheese too, not the green can if you can help it. I would prefer using Barilla Spicy Marinara sauce on this. It's hard to find but I buy it at Walmart. I'm not a huge fan of jarred sauces and the like but they do have their place in my pantry. Using my suggestions you may fool someone that you spent some time in the kitchen! Kinda like dressing up a "superstore" outfit with a designer handbag, shoes or jewelry. ;)

Linguine with Clams and Spicy Marinara Sauce

Reviewed: Dec. 28, 2014
4 out of 5 stars because I think the instructions should be altered. Linguini should be boiled for 9 minutes not 4 and then added to sauce with clams because once the clams are steamed open they have been fully cooked and further cooking can make them rubbery. Otherwise an easy and great dish. Also, I used Manilla clams which are smaller and sweeter than littlenecks. I also did not need any of the pasta water at all

Cranberry Nut Stuffing

Reviewed: Nov. 6, 2014
First off we really liked the nuts in this stuffing, the cranberries, not so much. This recipe is not false advertisement as he states that it is tangy in his description. That being said, if you love the tartness of cranberries you will probably enjoy this stuffing. I used fresh cranberries and cut them in half. I would also add extra rubbed sage and other stuffing spices you enjoy and use the whole can of chicken broth.

Corned Beef-Stuffed Pumpernickel

Reviewed: Nov. 6, 2014
This dip "grew on my husband". He enjoyed it more as he had more. I don't know why. We did like it but I did add extra garlic powder and a little bit of cayenne powder. It is not something I would make again because their are other dips that I prefer more and if I'm going to eat a high fat appetizer I had better LOVE it. If you do try this out, make sure and remove the paper wrap completely from the corned beef can or the gadget to open it will slip and then you are screwed. Take it from me, it was not a pretty sight by the time I got my can open.

Triple Citrus Cupcakes

Reviewed: Nov. 1, 2014
These are delicious upcakes with just the right amount of orange flavor. I zested my peel, I did not grate. Also for those new to zesting, make sure you zest just the colored part of the skin. If you start removing any of the white pith it will make things taste bitter. I should have bought two limes because I needed extra juice for the frosting because it was to thick for me and needed additional juice. I had to use lemon because I ran out of lime juice. I also added a little more vanilla extract and just a bit of canned evaporated milk to get the frosting to the consistency I like. Add very small amounts until you get the consistency you like. I then added some orange gel coloring to the frosting and they looked beautiful!

Slow Cooker Apples with Cinnamon and Brown Sugar

Reviewed: Oct. 29, 2014
This was ok for us but maybe this was my fault for using quick cooking oatmeal but Idk if that would make or break this recipe. I also believe we would have enjoyed It more if I would have removed the apple skins completely before cooking. I'm not sure if the apples are supposed to be tender or downright soft and mushy because that's how mine turned out after 3 hours on low. The flavor was good and not too sweet so as others mentioned, very good on vanilla ice cream. I would make this again as it is a great dessert recipe that takes minimal work and attention, but peel the apples before cooking and also check their tenderness after 2 hours or so.

Slow Cooker Mexican Beef Stew

Reviewed: Oct. 28, 2014
Next time I will definitely use some crushed red pepper like recipe suggested. Not a lot, just a little. I used 1/2 more stew meat and glad I did. You can always add more veggies if you want, I know I did. I also deglazed my frying pan with the beef broth so I wouldn't lose any flavor. Also, using that liner meant I didn't have to wash out my slow cooker! Holla!!!!!

Baked Smoked Sausage Spaghetti Casserole

We liked it but next time I would add some tomato paste and more seasoning because I like a little more tomato taste and sauce with the spaghetti.
