About this Cook

My favorite things to cook
I have a favorite peach cobbler dessert that my hubby loves and it is so easy to make. It puts a smile on anyone's face.
My favorite family cooking traditions
Thanksgiving dinner, Christmas eve dinner and St. Patricks Day dinner. My husband and kids look forward to these dinners each year.
My cooking triumphs
I cooked a huge prime rib dinner for Christmas last year for a large family dinner (20+) and it was delicious although a couple family members could not get over the very pink meat!
My cooking tragedies
A lemon meringue pie I cooked when I was about 18 years old would not set and it was full of liquid when I cut it. My dad still teases me about this to this day!

Baked Ziti with Cheese
Just okay. I used regular fresh mozzarella, not buffalo mozzarella. The cheeses are sooo good on their own, but the finished dish was not worth the cost of the cheeses in my opinion. Too bad because I really wanted to like it.

Mexican Sushi
A fun appetizer for anytime! Except for the cream cheese mixture, I added each ingredient in rows parallel to the direction I was rolling them up. (see picture I added)I think it makes a cleaner appearance after cutting them. Hope that makes sense. Roll them very snug to eliminate gaps between the ingredients and make sure your knife is sharp so you don't tear the tortilla when you slice them.

Creamy Pea Soup
This is "thinner" than other split pea soups I have made before, but it is smoother and creamier where others are much thicker. I'm thinkng it will be the perfect consistency on the second day. We shall see. I didn't have any carrots or celery so I substituted frozen carrots and peas from a bag and celery salt. I also tossed in one chicken bouillon cube 'cause I like to live life on the edge. Turned out yummy!
