Cranberry Sauce with Apricots, Raisins, and Orange

Delicious and nutritious! I added the wheat germ and walnuts into the mix and they turned out wonderful. My picky husband and two year old boy can't stop eating them! I froze some so that they last longer.

Mushroom Orzo

I had a mushroom orzo from our local italian restaurant that I have been craving, and this was nearly identical...and delicious! Next time I would add more mushrooms (perhaps shitake) and finish with some truffle oil. I doubled the sauce and added shrimp in the last 5 minutes of cooking and allowed it to rest for a few minutes after. Absolutely awesome!

Tex-Mex Turkey Soup

I spiced it up with Cayenne pepper and a bit of salt, but all in all, this was delicious! Great way to use leftover turkey!

Lower Fat Banana Bread I

Mine only needed to cook about 35 - 40 minutes. I noticed at 42 minutes that it looked almost burnt at the edges. I don't know if it's the high altitude but 350 for 35-40 minutes would be perfect

Best Ever Sausage with Peppers, Onions, and Beer!

I used spicy sausage, fried the peppers and onions up right after the sausage, took them out, put in garlic, beer, paste and spices to simmer for 10 minutes then added meat and pepper onion mix back in for 30 minutes. I would probably add less beer next time, or remove juices after peppers and onions because it was too wet. The flavor was awesome!
