Soy and Garlic Marinated Chicken

This was good and seriously easy. I was looking for a marinade that I could throw together in 30 seconds on my way out the door and this fit the bill. I was grilling drumsticks and they came out great. I didn't have time to read the reviews, but if I did, I think I would have added that little bit of brown sugar. I think that would be a 5-star recipe. Ginger would also be a nice addition. But if you're in a rush or feeling lazy, garlic and soy sauce are really all you need. I bet this would be good on salmon as well.

Hummus III

I just caught myself licking the immersion blender. This is some seriously good stuff. I love how lemony and garlicky it is -- puckery and really, really good.

Tres Leches (Milk Cake)

Don't get me wrong, this tasted good, and my guests said they really liked it, but I can definitely see what other reviewers meant by the eggy flavor of the cake. I also thought the sauce was missing a little bit of the mouth feel that it needed. Maybe cream instead of milk would do the trick? Good, but not quite perfect. The hunt is still on for the best ever tres leches cake.

Morning Glory Muffins I

OMG, these were so good. I find that the "healthy" whole wheat muffins tend to be flavorless and so dense that you could use them to cosh someone, but these had a really great light texture and a ton of flavor. My toddler went crazy for them. I did a couple of minor modifications -- I did half apple butter and half applesauce. I also added some pumpkin pie spices, like ginger and nutmeg. I used butter instead of oil. I left out the wheat germ but I put in a handful of ground flaxseed. I also put some nuts into the batter. The batter looked a little dry at the end, so I added some extra applesauce. Then I sprinkled a pinch of sugar, some whole flax seeds and some chopped nuts on the top. So good. This recipe is definitely a keeper. I feel like you could easily add lots of other types of fruits or nuts you have on hand.
