Hey, I'm a young Mum with two little kids and one "bun in the oven". My husband and I are living in South America, working with our church group, the Christadelphians. Mission work, young 'uns, a limited variety of food resources and a long list of allergies (dairy, wheat, etc, etc) leave me with my hands full, zero time and a tight budget. I need all the help I can get, and I LOVE coming here for ideas.
My favorite things to cook
I love to keep things simple, sticking to natural, whole-food ingredients as much as possible. I love finding new ways to make green smoothies, one of my favorite things to make (for myself...). When we finally figured out my daughter's allergies, we stepped into a weird world of almond flour, arrowroot starch and rice milk. I suddenly was making sushi every week and rice flour pancakes. We have learned to love rice pasta, especially with a tasty peanut butter and broccoli shrimp sauce, homemade smoked salmon sushi rolls and simple meals like refried rice.
