Spring Lime Tea Cookies
Very good. Light and delicious -- not too sweet, slightly spongy in the middle (kind of like light madeleines near the center), looks pretty. I recommend using about a full teaspoon's worth of batter for each cookie. Leaving the batter in the fridge for 15-30 minutes made it easier to spoon out. My batch had some extra zest (a little under 3 tsp total), and it came out to be just about the right amount of lime flavor. The icing is not necessary but good if you want more tartness from the lime and/or sweetness.

Fluffy Pancakes
Great recipe -- YUMMY. The pancakes were fluffy and tasty, and the recipe yielded just enough pancakes for 2 adults. I added a little vanilla to the wet ingredients, which enhanced the flavor. The only issue I had with the recipe was that it was very sweet -- my first bite nearly gave me a sugar coma. I am definitely going to halve the amount of sugar in the recipe next time. If you do use the original recipe, be light on the syrup -- or consider using fruit/whipped cream topping w/o syrup.

Apple Pie by Grandma Ople
YUMMY. This was the first apple recipe I ever tried, and it came out as good as any pie I've ever tried from a bakery. I used a butter-based crust I made from scratch, and added a little vanilla extract and some whiskey (an idea I got from another recipe) to the sugar/butter liquid. The liquid made a nice glaze on the crust and added a slightly syrupy texture to the pie. The vanilla/whiskey addition made the pie taste quite like a French tart. A recipe I will cherish and use for all my future apple pie needs. Thanks!
