Olive Salad for Muffalettas

Reviewed: Feb. 24, 2012
this is not the recipe from the Central Grocery in the French Quarter that created the original Muffalatta sandwich. I have eaten there many times and this one lacks many of the original ingredients.

Bermuda Spinach Salad

Reviewed: Feb. 22, 2012
Just a little tip to save time. Instead of boiling the eggs, cooling the eggs, peeling the eggs, just to chop them. Simply poach the eggs in a little vinegar water, then cool and chop. No peeling involved and faster cooling time as they are not confined to the inside of the shell!

Asian Beef with Snow Peas

Reviewed: Jan. 27, 2012
If you add the correct amount of cornstarch or arrow root to the sauce before cooking and mix it in well. then you won't have to wait for the sauce to reduce and thcken. Tthereby, not overcooking the meat and snow peas. Nothing worse than overcooked stir-fry!

Grilled Corn on the Cob

Reviewed: Jun. 18, 2011
This recipe is better if the corn in the husk is allowed to soak in brine first. A mixture of water with equal parts of salt and sugar added and mixed in until both dissolve, then add the corn and leave overnight. remove, drain, and grill.

Feta and Bacon Stuffed Chicken with Onion Mashed Potatoes

Reviewed: May 9, 2011
Might taste pretty good, however, could use a better picture! 90% of culinary field is plate presentation and eye appeal. This has very little of either.

Roesti

Reviewed: Apr. 13, 2011
Great recipe, but, a little bleak on the additives that can be injected into the recipe as well. Also, this works best in a cast iron skillet.
