Yummy Sweet Potato Casserole

Reviewed: Dec. 12, 2011
Love sweet potatoes! I follow the directions except I used 1/4 cup of white sugar. I don't like to measure so I taste as I go along and I used a little less than 1/2 cup of brown sugar as I did not want it too sweet. I did not boil the potatoes instead I baked them like suggested from one of the reviewers. The result delicious! I suggest you bake the sweet potatoes it gives them a great flavor. I love this recipe and it's a keeper for my next Thanksgiving. Thanks!

Chili-Lime Chicken Kabobs

Reviewed: Mar. 28, 2014
Absolutely delicious. I marinated the chicken for about 6hrs I did not include the vegetables in the chicken marinate. I marinated the vegetables in a separate bag and only for 1hr. I use 1/2 tsp chili powder my husband does not like anything spicy. Since chicken takes longer to cook I skewered the chicken alone then the veggies on a separate skewers. For the vegetables I used onions, cherry tomatoes, zucchini and red peppers. I used 3 limes instead of one and fresh garlic. When I whisk everything together I taste it to make sure it has a taste I like and make any adjustments. I served it with rice. Thank you for the recipe!

Guacamole

Reviewed: Aug. 26, 2011
I made a slight change I followed the recipe but added some salsa about 1/4 cup that I had on hand and a few chopped can jalapenos. Also, I added more tomatoe. It's more a "taste and adjust" to your liking. This is more of a topping on tacos or quesadillas than a salad.

Tuna Casserole III

Reviewed: Jan. 18, 2011
OMG! I also grew up with this recipe with the exact ingredients. We were five kids plus Mom and Dad and money was tight so this fed everyone. I thought it was my Mom's recipe..haha guess a lot of homes at the time needed to stretch that dollar. I love this recipe but not my husband so I only do it occasionally.

Butternut Squash Soup

Reviewed: Dec. 30, 2012
I loved this soup and so did my family. I did make some changes after reading some of the reviews. I used 2 tablespoons of butter I don't like margarine, 3/4 of the cream cheese ( I thought 2 pkg was too much)and I did not use chicken bouillon instead I used 32oz of chicken broth from the box or you can use the cans. I peeled the butternut cut in pieces and put in the oven in a cookie sheet to roast. You can adjust the consistency of your soup by adding water or you can add half and half. Since I did not use 2 packages of cream cheese I did add some half and half. If your soup looks great and taste wonderful then you made a delicious soup. Very good on these cold days. :)

Scalloped Potatoes I

Reviewed: Jan. 10, 2011
Very good! I used a large dish so I went ahead and used 1 can of Cheddar and 1 can of mushroom soup and I used both Cheddar and Mozzarella cheese. For the last few minutes I put lots of cheese on top and broil it to make it crispy on top. Keep an eye out so as not to burn. My guess enjoyed it and at the end of the meal scallops were all gone.

Amber's Sesame Chicken

Reviewed: Jul. 13, 2010
Very good! I read the other reviews to give me an idea. I did add more teriyaki and honey and more vegetables like your member suggested. I did shake the chicken to remove excess flour before browning. Before serving I added some chow mein noodles on top for the crunchiness.

Cream of Fresh Asparagus Soup II

Reviewed: May 9, 2015
This is a delicious soup. I double the recipe for extra guess. Before blending the asparagus I saved some tips to add to the soup later. I did not use milk but whole whipping cream and only used 6oz and not 8oz. I wanted the soup to be consistent but not too creamy. I used 3 cans of chicken broth. I always add ingredients slowly and taste as I go to make sure that it has enough salt, pepper, cream, etc. that way I just add or take away to please my taste. I watch the pepper my husband does not like anything spicy. Make sure that you cut the bottom of the asparagus where it is the whitest and tough you will know when you start cutting. You don't want your soup to have tough pieces. I think this is a wonderful soup recipe just like the Butternut squash soup you find in this site. Enjoy!

Chayote Squash Side Dish

Reviewed: Jan. 11, 2014
Delicious! I used lime juice instead of the wine vinegar and I peeled the chayote before cooking. I was not sure how it would come out since we eat chayote often but it is always boiled. I love my chayote to be crunchy so I made sure it was not overcooked. Loved the recipe and will make it again this way. Thanks for sharing!

Summer Tomato Salad

Reviewed: Sep. 4, 2011
I loved this simple salad. I did not have yellow pear tomatoes so I omitted it. I made slight change by adding 2 TBS of extra virgin olive oil and about 1tsp of red pepper flakes and I squeezed 1/2 a lemon. Very refreshing!

Mouth-Watering Stuffed Mushrooms

Reviewed: Jan. 18, 2011
Delicious! Actually I used 15 mushrooms and 1/2 the cream cheese. I did not want it too cheesy. I have a small toothbrush that I use only for the mushrooms and that's how I clean them. I did add pepper flakes my family likes it a little more spicy and 1/2 tsp of cayenne pepper and topped it with Panko bread crumbs and a little butter on top. It came out a little crunchy really yummy.

Easy Beef Pot Pie

Reviewed: Mar. 28, 2014
Very good and tasty. I used fresh organic carrots, onions, frozen peas and potatoes. Instead of 1/3 cup of water I used beef broth. I seasoned my meat with some spice, salt, pepper and parsley flakes. I use 1/4 cup of dry sherry in my meat. I omitted the thyme my husband does not like it. Sometimes pot pies can be boring but this was very good. Thank you for the recipe.

Mexican Wedding Cookies

Reviewed: Dec. 20, 2012
This Mexican Wedding Cookies are delicious. Light and not too sweet. I,like other readers used powdered sugar instead of the granulated sugar. When I took them out of the oven I let them cool for about 5 minutes and then carefully with a spatula I put them on the wire rack( otherwise they will crumble) and sprinkled powdered sugar and let them cool. Once cooled I sprinkled them again with powdered sugar. They do expand when baking so I made mine very small so you can just popped them in your mouth! For Xmas I am baking these cookies but this time I will try the recipe with cinnamon.

Ceviche

Reviewed: Jun. 29, 2013
Very good. I bought fresh scallops and shrimp and I boiled them slightly quick rinse in cold water so they stop cooking. I did use lots of lime juice and lemon juice. I used red onions since this is what I had on hand and since this was a last minute I mixed everything refrigerate for three hours. I doubled the recipe and glad I did everyone had seconds. Thanks for sharing.

Broiled Grouper with Creamy Crab and Shrimp Sauce

Reviewed: Jun. 2, 2013
Very good. Made some changes, I did not have crab meat but I had some fresh small shrimp and bay scallops and I added green onions. I omitted the mustard. I had Mahi Mahi on hand and that's what I used and once in the oven I put Panko bread crumbs on top to give it a little crunch. Mahi Mahi was delicious and the "shrimp/scallop" sauce gave it a nice touch. This goes to my recipe box. Thank you.

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Dec. 12, 2011
I used sourdough bread instead of wheat and white. I used turkey sausage and pork sausage and Smith apple (that't what I had on hand) and used chicken stock because I could not find the turkey stock. Everything else the same except I do not believe in stuffing the turkey. I put sage a couple of lemons and a orange and poke them with a fork and put them inside the turkey ( if you do this make sure you put some butter, sage, salt and lemon juice between the skin to give it flavor). I cooked my stuffing separate. I think it was very good a little on the bland side. Stuffing is one of my favorites and I like to try other recipes. I think my grandmother's recipe is the best....will try and put it up with picture at some point. Thanks!

Scalloped Potatoes and Onions

Reviewed: Dec. 12, 2011
I added all ingredients except the mayo, my family does not like mayo. I found it bland and maybe the key ingredient is the mayo other than that it was good. Next time I will try a little variation like some suggestions from the reviewers
