Quick Savory Cranberry Glazed Pork Loin Roast

Easy to make and result was delicious. I set aside about half the sauce (before basting) to serve in a gravy boat. The only complaint I have is that it was difficult to judge when the pork was done and ours ended up slightly overcooked, so it was a touch on the dry side.

Corn and Crab Cakes

Made these for my husband's birthday and they were easy and delicious! Very tasty! Some of the other reviewers complained that they had trouble getting the cakes to hold together, but I had no problem at all. The trick may have been that when I mixed the ingredients together, I used a fork to break up all the crab pieces, so that the entire mixture had a "tuna salad" type consistency. That way, the cakes held together very nicely. Just in case, I also put the cakes in the refrigerator for about ten minutes before I fried them, but I really think it was the mixing that did the trick. A P.S. TO THIS REVIEW. I have made these several times since I most recently wrote this review, but tonight I bought canned "crabmeat" instead of the canned "lump crab" I have used in the past. Now I understand why other reviewers have so much trouble with the cakes falling apart! Use canned "lump crab", and break up the pieces with a fork. Your cakes will stay together. Do not use the "crabmeat" that is shredded into tiny pieces in the can!!

Pepper, Onion & Feta Pizza

This is a good starting point but it's better if you add something to spice it up. There are lots of good ideas in the other reviews. I also added a little mozzarella just to hold everything together. Also, I think it would be better to chop the onions rather than slice.

Absolutely delicious and easy to prepare. Use the aluminum foil -- it makes cleanup a breeze. Will definitely make again!

Cousin Cosmo's Greek Chicken

After reading the reviews, I tripled the flour mixture to make sure there would be enough. Used a good meat pounder to thin the chicken; without this, it would have been very hard to fold the chicken over but I pounded it down to a half inch as the recipe said and had no issues. I used one bag of baby spinach, and thought it was plenty. Otherwise, made exactly as the recipe says. It was easy to prepare, healthy, and delicious.
