Indian Saag

Wonderful recipe! I love saag and this recipe is great with a little bit of greek yogurt mixed in, if you're in a hurry, or some home made paneer! When in a hurry, I just use frozen mustard greens and frozen spinach and it's done and ready to eat in about 10 minutes!

Candied Yams

This dish is absolutely delicious! The yams just melt in your mouth! I took the advice of other reviewers and added cinnamon along with the brown sugar and also used freshed yams. I let it sit in my fridge for about 5 hours so the flavors could blend before adding marshmallows and sticking it in the oven. I also made sure to spray my aluminum foil with cooking spray so it wouldn't stick to the foil. After the initial 25 minutes of cooking, I took off the foil and added more marshmallows and let it cook uncovered for another 10 minutes. The marshmallows got nice and browned and crispy, tasting like the toasted marshmallows you get over a camp fire. The combination of the marshmallows with the yams was so amazing. The whole thing just melts in your mouth!!!

Eggplant Parmesan II

This recipe is outstanding! Such wonderful comfort food! I took the advice of others and sweat my eggplant before breading it, however, I didn't rinse off the salt, only patted the eggplant dry on a paper towel. I also didn't peel my eggplant, since I like the skin, and added sauteed mushrooms between the layers of eggplant, sauce and cheese. Everything else I followed exactly and it came out superb! This recipe is definitely going to become a family favorite!

Jean's Swedish Faux Meatballs

Upon reading the reviews of others, I decided to add 2 eggs to the mix in hopes that this would help hold the meatballs together, which it did! I also added a little bit of cardamom and all spice to the mix. This recipe is SO delicious! I definitely love the sauce as well. My husband and I ate the whole pan between the two of us. Poured over some egg noodles, it's almost like eating stroganoff. I absolutely would make this recipe again. It is definitely comfort food for the soul.

Quick Alfredo Sauce

Quick and easy! Instead of the parsley and garlic, I mixed in some pesto that I whipped up and the combination is amazing! Perfectly gourmet for something you can put together in a pinch!
