About this Cook
My mom was a most excellent cook. She taught me a lot, but I've also learned a lot on my own. I think it is a genetic blessing.
My favorite things to cook
Just about anything. I make a fantastic Italian red sauce that simmers in the oven for a day. You then can use it as a base for Chicken Parmesean, or add meat for a meat sauce, or meatballs, use it for lasagna sauce or for a dipping sauce with bread sticks. I also love to cook basic comfort foods (my step-daughter begs for my chicken noodles and beef and noodles) I am a well-rounded cook in that I love to cook most anything.

Zucchini Herb Casserole
This sounds delicious, however, I used Quinoa (instead of plain white rice, which has no nutritional value) and beefed up the spices and reduced the cheese to make it more WW friendly.

Waikiki Meatballs
This is actually an old recipe given to me by a friend of mine. When you get to the sauce, sometimes it comes out a little thick after cooking. Unless you happen to have pineapple juice on hand, add about 1/4-1/2 C of orange juice to thin the sauce. Excellent! You can also substitute leaner beef and/or mix with ground turkey for a healthy alternative.

Magic Cookie Bars II
have been making this for years! Also try milk choco chips and peanut butter chips for "magic buckeye bars" or chocolate graham cracker crust and almonds instead of walnuts, and omit the butterscotch chips altogether for "Almon Joy" Bars". I have experimented with many combinations!~ Have fun!
