Sweet Potato Bake

Made this tonight, I had to omit the topping due to someone's mouth sensitivity. I added 2/3 cup of light brown sugar to the sweet potato mixture and baked for 35 minutes at 400. It turned out great!

Spicy Bratwurst Supper

This was very good. I only give 3 stars because I had to make so many changes to the recipe though. Due to budget constraints I had to use what I had on hand. I wasn't able to do the jalapeno or the gouda. I had a package of 5 large hot italian brats (not precooked) to use and thought it would offset the need for jalapeno in that case but I used 3 strips of thick-cut butcher bacon rather than 6 because they are so thick. I boiled the brats in onion laden water for 10 minutes then grilled until done. I used four-cheese marinara sauce and aged white cheddar, grated. This was a huge hit on a thursday night before payday. I served over rice with steamed italian veggies from Birdseye as a side with lemonade. This was great,, thanks for sharing...

Quick Clam Chowder

this was terrific and easy. we had this with kettle chips, salald and crusty bread, made for a great busy day meal, leftovers going to work for lunch.

Fast and Easy Turkey Pot Pie

I have to say I am really disappointed in this recipe. The pieces did not cook all the way in the middle and they are not sweet! Even with all that sugar...really hard to take at 7am on a Saturday. Total cooking FAIL

Brown Sugar Meatloaf

I mixed all the ingredients together and lined my pan with a narrow rectangle of parchment paper to make removal from the pan easier. I followed cooking instructions and it was wonderful, moist and yummy. My whole family loved it and it made great leftovers!

Hot and Sour Soup with Tofu

This was very good. I ommitted the bell pepper and water chestnuts, added an extra green onion and used white wine vinegar since it was all I had on hand. The end of the cooking I added a scrambled egg with water to the soup and it was terrific. We are having with Spam fried rice.

Black Bean and Corn Quesadillas

This was terrific! I made with corn tortillas rather than flour due to gluten-free needs. We assembled them like tostadas and they were just amazing. The sweet spice hotness flavor was just right. We used Tostitos restaurant style salsa.

Slow Cooker Oatmeal

This isn't what I thought I guess. I used Bob's Red Mill Gluten-Free Oatmeal and 3.5cups of water in a 1.5lt crock overnight on low. Still had a soupy consistancy after 9 hours. Nothing I could add cream too since it would have been way too liquidy. My 7 y.o picky eater liked it with butter and brown sugar added, my husband just liked having a hot bfast ready for him at 6am so he ate it without issue. My 5y.o wouldn't touch it. Taste was fine but consistnacy was ??? I'll need to tweak this more because a different recipe wouldn't make sense since its just water and oatmeal overnight. Less water at the beginning I would think if using the g/f oatmeal.

Peanut Butter Pie IV

This pie was a last minute idea. I made a gluten-free crust of dry crushed gf double chocolate cookies from T-day, and made up the pie. I used Redi Whip since it was all I had on hand, worked beautifully, froze for 30minutes and then to the fridge for another 30. It was ready for dessert on time and a simple but sweet treat to end the Christmas day. Great with a cup of coffee!

Sugar Cookie Glaze

This was good. I will use it again. It was a little runny but I think it was because I added a 1/4tsp of vanilla for flavor. The cookies took 2 hours to dry, but then still tacky - I will try more sugar next time.

Mexican Mole Sauce

We are very pleased with this recipe! My 4year-old loved it. We had it over chicken wrapped in flour tortillas and added fresh avacado, tomato and made corn chips at home. I added a little (1/4cup maybe) extra water at the end before the boil to make sure it didn't get too thick. It turned out perfectly and I was very impressed. I will use this recipe often - we have mexican food several times a week.

Old-Fashioned Potato Pancakes

I made these tonight since I had a ton of potatoes left over from my holiday cooking. I did not have parsely so I made them without. I used my non-stick griddle, mashed the pancakes out very thin with the sides of 2 forks and cooked them until very crispy. The husband and son ate them as they were done since they do not sit well and become soggy very fast. I ate mine while still cooking several on the griddle. Had them with applesauce and sour cream, maple syrup or cheese and ranch dressing.

Chicken Flautas

This turned out good for my family. The contents ended up a little dry, I added lots of salsa, cheese and sour cream to the served dish but it may have drowned out some of the flavor of the dish. I did like the ease and the amount it made though. Very nice

Marilyn's Cheesy Clam Chowder

Loved it - made up a batch for National Clam Chowder Day (Feb 23) and it was a huge hit. Used sweet potato in place of white because it was all I had on hand. Also use extra sharp white cheddar - gave a tremendous kick to the chowder although it didn't look as nice, it separated too much but that was my own fault.
