Beefy Cabbage Stew

Reviewed: Jun. 27, 2010
Very thick & tasty. Added onion & garlic. Couldn't find Greek-style seasoning at store so used Perfect Pinch Lemon Herb. Used shredded cabbage and chopped carrots in place of coleslaw mix. A little concerned about all the salt but we really enjoyed it.

Everyone seemed to like this. I didn't see love. Not exactly healthy but probably could be.

Egg Noodles

Reviewed: Jan. 7, 2011
Who knew making noodles could be so easy? I used white whole wheat flour, my Kitchenaid, and a pizza cutter. I also used olive oil instead of butter. I will probably make my own egg noodles from here on out.

Giant Ding Dong Cake

Reviewed: Feb. 8, 2011
I made the cupcakes per other reviewers directions and they were the hit of the party. A little extra work in making the cream filling but well worth it for the results. I'm not a cake/cupcake lover but I loved these.

Fragrant and Healthy Carrot Cake

Reviewed: Feb. 14, 2011
I don't know if it's fair to rate this recipe when I made so many changes. I doubled the recipe and cooked it in a 9X13 pan. Glad I checked it after only 40 minutes because it was already overcooking. Replaced the raisin with dried cherries (I have family members who won't eat raisins). Replaced the oil with crushed pineapple and replaced half the sugar with Stevia. The poppy seeds gave the cake a crunch. Overall, everyone thought it was pretty good, including myself, but no one raved. I will probably keep the recipe and use it again.

Chicken Marsala Florentine

Reviewed: Feb. 14, 2011
I used olive oil instead of butter and not as much as called for but used a lot more Marsala. We loved this; it was a hit with almost everyone at the dinner party. Definitely a keeper.

The Best Rolled Sugar Cookies

Wasn't too sure about these when they came out of the oven. They got better as they sat. Stored them covered in the frig to keep them from getting hard.

Mostaccioli with Spinach and Feta

Reviewed: Feb. 23, 2011
Wow was this tasty. I did add a lot more garlic because I'm a garlic fan. Also added onions and orange sweet peppers and used whole wheat penne to make it more nutritional. When the noodles were cooked, I stirred in a heaping tablespoon of pesto. I will make this again, many times I'm sure.

Breakfast Loaf

Reviewed: Feb. 26, 2011
This was fun and a hit at weekly family breakfast. Easy to adapt to own tastes. Added onions, garlic, and spinach to eggs and with the sweet peppers and tomatoes, felt almost healthy. Cooked it in a pumpernickel loaf. Yummy!

used dried cherries instead of dates, added chopped pecans, applesauce instead of oil. Felt good about giving these to my granddaughter and eating them myself. Healthy and yummy!

Took a doubled recipe to a party and it was a hit. I loved it but my mom found it too sweet for her taste. Will definitely be making these again.

Non Sugar Heavenly Angel Food Cake

Reviewed: May 1, 2011
Not sure what I did wrong but this was not as light as Angel Food Cake usually is. Maybe I didn't fold it right or perhaps it was "no sugar." However, it was tasty and well liked by everyone else. I used it in a Trifle instead of pound cake.

English Trifle

Reviewed: May 1, 2011
Everyone loved this more than I did but I have to admit that I used a sugar free Angel Food cake recipe for the cake instead of what was called for. I'm probably just not a huge English Trifle fan.

Healthy & Delicious! Followed another reviewer's suggestions and used apple sauce for the oil, Stevia for the sugar + 1t brown sugar. Didn't have wheat germ so used ground oatmeal. Topped with sliced strawberries and FF whipped topping. Mother's Day breakfast success!

Didn't have the same vegetables, didn't even have the fresh herbs so used dried. They were still a hit with everyone. Can hardly wait to use fresh herbs.
