Super Seven Spinach Salad

Beer Bread I

Breakfast stuffed sweet peppers

Next time we will definitely use red, orange, or yellow peppers and may replace some of the potatoes with zucchini and yellow squash, maybe some mushrooms.

We added 2 more cloves of garlic, as we are garlic lovers, and some artichoke hearts. Holy Cow was this delicious. This recipe is definitely a keeper.

Cornbread Pancakes

We loved these! Didn't have all-purpose flour so used White whole wheat and they still got a thumbs up from the whole family. I think next time I will try Olive oil instead of butter just to make more healthy.

Ghirardelli® Triple Chocolate Truffle Cake

This was delicious and smooth as long as it was chilled. Unfortunately, it sat out for quite awhile at a buffet function before it was served and I was not impressed though everyone seemed to like it. Once leftovers went into the fridge and came out again, it was wonderful.

Egg and Cheese Puffs

I left out the butter and cut the cheese in half. I used Pepper Jack and Canadian Bacon. Everyone loved it. My only problem was that it was more work to clean the pans than it was to make the recipe. I oiled the tins really well. Any suggestions?

Apres Ski French Toast

This was tasty french toast. I probably needed to cook it a little slower and longer because it was a little mushy in the center, probably because of the large amount of milk to egg ratio. I felt good feeding this to our family because it was low fat & whole grain.

Fragrant and Healthy Carrot Cake

I don't know if it's fair to rate this recipe when I made so many changes. I doubled the recipe and cooked it in a 9X13 pan. Glad I checked it after only 40 minutes because it was already overcooking. Replaced the raisin with dried cherries (I have family members who won't eat raisins). Replaced the oil with crushed pineapple and replaced half the sugar with Stevia. The poppy seeds gave the cake a crunch. Overall, everyone thought it was pretty good, including myself, but no one raved. I will probably keep the recipe and use it again.
