Coconut Cream Cake I

One of my favorite cakes ever! I've made it a couple of times with just 2 minor changes. I substitute the vegetable oil for coconut oil and omit the coconut extract. It is absolutely perfect!

Italian Chicken Skillet

This was delicious! Left out the shredded cheese because of a child with a dairy allergy. So we added the cheese after plating our food. Will make this again for sure.

Chicken Tikka Masala

I toned down the spicy seasonings and eliminated the salt almost completely. It was delicious! The only mistake I made was making white rice instead of basmati rice. Will def. make again.

Chef John's Swedish Meatballs

If I could give it 6 stars I would! Absolutely delicious. Made it per recipe except for allspice (which I didn't have so I left it out) and heavy cream (all I had was 2% lactose free milk). I did have to leave them in the oven for an extra 10 minutes but that might just be my oven. Will be part of my regular menu from now on.

Extreme Chocolate Cake

This cake is just plain delicious! Although I've made it exactly like the recipe says, I also like using coconut oil instead of veggie oil. It gives it a really nice twist.

Chicken Asparagus Roll-Ups

This recipe is a keeper! I didn't have asparagus, tarragon or provolone so I used carrots, fennel seed and muenster cheese instead. I love the mayo sauce. Will try it with asparagus next time. But it was delicious regardless. Made it with a side of quinoa.

Sweet Potato and Coconut Bread

I tweaked it a little but it was unbelievably good. I used half butter and half coconut oil, a little less sugar and sweetened flaked coconut (it was all I could find). I also left out the nuts and added some craisins. My friends and family can't stop eating it.

Grandma VanDoren's White Bread

I decided to start making my own bread after reading labels on the store bought sliced bread. I like knowing exactly what's going into my bread. And this is a wonderful bread recipe! This is only my second time making bread but this was really good. I substituted vegetable oil for coconut oil and 2 cups of whole wheat flour out of the 8. Other than that I followed the recipe. I will be making this bread again very soon.

Classic Minestrone

I'm giving this 5 stars with the tweaks I made. I used half an onion instead of the leek, tow small-ish fresh tomatoes and 1 8oz. can of tomotoe sauce, less than 1 tablespoon of fresh thyme, white navy beans, small shell pasta and I didn't need any additional salt or pepper. I used Penzeys Spices vegetable soup base to make my stock and it was all the seasoning I needed. I couldn't believe how good this soup came out. The flavors are amazing!
