Big Soft Ginger Cookies

Quick and Easy Vegetable Soup

I'm pregnant and make this often since I can cram so many healthy vegetables into this soup. I usually also add cabbage and lima beans as well. I use low sodium spicy V-8 to give it more of a kick. Perfection!

Champagne Cocktail

Apple Crisp with Oat Topping

Incredible and simple. Not too sweet like some of the other recipes I've tried. I will however make more of the topping or use less apples next time, because I thought the ratio of apples to topping was not completely to my taste.

White Cheese Chicken Lasagna

This was really creamy and rich and turned out beautifully. Although my husband and I really enjoyed this, there was something missing for me. It was kind of blah. I feel like it needed something to punch it up. I wish I could figure out what it needed. For all the time and dishes I dirtied for the result, I may put this one on the back burner.

Chunky Peanut Butter Cookies

This is the best peanut butter cookie recipe I've tried! I only added the coconut and skipped the raisins, chocolate chips and peanuts this time. Everything abbout this cookie is perect: texture, flavor, appearance. Thank you!

Carrot Pineapple Cake I

Delicious!! I realized Easter morning I was out of vegetable oil, so I substituted with all applesauce and a teeny bit of olive oil. The cake was stunning to look at and even better to eat. The cream cheese frosting complimented it perfectly!

Cucumber Sandwich

So fresh and addicting! Very versatile; you can add or subtract ingredients according to your taste. I toasted the bread and sprinkled garlic powder and dill on the cream cheese after spreading it on the bread to give it even more flavor.

Uncooked Banana Pudding

Fantastic and so easy! I used almond milk and it came out great, too. Next time, I'll use 5 bananas because I had more pudding mixture and cookies left over.

Mexican Chicken Corn Chowder

Great base recipe. It really needed punched it up because it was was too bland for our taste. I added a small can of diced jalapenos, much more cumin, chili powder and I chopped up some red bell pepper. Added a can of corn and a can of chicken broth in place of boullion as others suggested as well. The result was fantastic. Will definitely make again with the changes.

Super easy and scrumptious! I wish I knew about this over the summer. Even though it has more calories, I will always make it with regular (not sugar-free) vanilla Jello pudding in the future. The fake sugar aftertaste was very noticable in this dessert for some reason.

World's Best Lasagna

Fantastic! Made this for my husband and I and we ate off of it for a couple of days. Made it exactly as listed, but I used chicken sausage (instead of italian), which is much lower in fat and calories. Also added red pepper flakes, because we love dishes with an extra kick! Can't wait to make it again.

Frosted Grapes

My initial thought about covering fresh grapes with a sugary gelatin mix was that it seemed tacky, but the raving reviews made me curious. I made mine with sugar-free cherry flavored gelatin. It is good if you are dieting and need a quick, super sweet fix. Other than that, I really don't see myself making it too often.

Fresh Pineapple Upside Down Cake

Though it turned out gorgeous, this was not my ideal type of PUDC. As another reviewer commented, the cake had the consistency of a biscuit and mine was not very sweet.

Chocolate Chip Oatmeal Muffins

As some others, I used 1/2 cup whole wheat flour, and 1/2 cups white flour. I cut the butter down to 1/4 cup, and used 1 cup of applesauce. I also used Splenda brown sugar blend instead of regular brown sugar. Cut back a bit on the chocolate chips by only using 3/4 cup. Added some cinnamon as well. I filled them almost to the top and they came out perfectly. Only made 10, though.

Chocolate Mint Candies Cookies

I made these for Christmas (4 months ago), and my husband and I were reflecting the other day about how good they were. They are that good! I used a half of an Andes mint on each one, and I felt that was plenty. I also opened up the mints and broke them in half before taking the cookies out of the oven as others suggested.
