Chicken Scallopini
LOVED LOVED LOVED this. After browning Chicken pieces, Simmered in white wine and a touch if sherry for aver an hour. Covered. Prior to serving uncovered and reduced sauce. Added capers. Placed chicken on top of platter of whole wheat spaghetti that was left over and then, when sauce reduced, poured over chicken and then served. May be the BEST chicken Ive EVER had. My husband loved it and I definitely will make for guests!!!!!

Addictive Sweet Potato Burritos
Interested in this immediately..Did mostly follow the recipe but used re-fried black beans AND Red kidney beans which I mashed and combined. I suppose one could buy pre - mashed sweet potatoes but i chose the organic route and bought, peeled, boiled, and mashed. Added diced bell pepper to onion in skillet. Incorporated a 1/2 cup mozzarella cheese to bean mixture. Topped mix with 4 cheese Mexican shredded cheese prior to folding burrito. Being it is a savory AND sweet dish combination, I beautified it by adding a spoonful of mango salsa on top finished off with a lovely fresh basil leaf. Offered sour cream on the side as well as salsa verde and/or hot sauce....YUMMY!!

Having been given our family traditional PR recipes, I always switch this up a bit...First after oil in skillet, brown tiny bits of ham or Canadian bacon or pork til just cracklin'....Sprinkle wih some Adobo seasoning...Then add bits of diced onion, tiny bits of potatoes, and then turn down heat some and add 1 or 2 ( I add 2 ) pkts Sazon....combine..then add a good 1 or 2 tbls Sofrito. Combine. Add 1 or 2 cans Goya tomate sauce. Finally add the pink beans. Combine. Cover and let all flavours marry. Simmer on low...Uncover when want to serve and cook liquid down ( only if too much ) but leave enough for it to have a creamy and not dry consistency. Now THESE are true PR beans! :)
