FANTASTIC. Period. Okay, not period...this is so simple to make and is perfect for leftovers. Take all those bread heels or slices of french bread that went hard over the week, take your leftover cheese, your leftover meats, your leftover veggies and with hardly any effort or time you have a wonderful, hearty, filling, and delicious brunch dish. It's nothing like those horrid "egg casseroles" people make...this has real flavor and depth. You can confidently substitute any cheeses, veggies, and milks...cottage cheese, feta, buttermilk, skim milk, any sort of veg. This comes out great every time and you can freeze individual squares for a quick and tasty meal any time. It's even good cold the next day. I especially love that I can throw it together and cook it hours (and even days) later. Perfect leftover recipe!
