Basic Pasta

A great basic pasta recipe. If you're making fresh pasta for the first time, USE THIS RECIPE. Like previous reviewers noted, letting the dough rest is so helpful. Wrap it in plastic or cover it with a towel and give it a few hours (or a day or more) and it is so much easier to work with. If it tears apart or is too stiff to roll, add a couple of tablespoons of water and let it rest some more. The flavor is perfect. Add or reduce salt as desired. Personally, I prefer to leave the salt out and just liberally salt the water. I have used this recipe for thick noodles, thin spaghetti, and lasagna. I've worked it both by hand and with a mixer with fine results. I've rolled and cut it both by hand and with a pasta machine and both were fine. It's really ideal and foolproof. Try it!

Roasted Brussels Sprouts

This recipe is fantastic. Simple, easy, non-complicated and it highlights the flavor and texture of really good brussels sprouts. It doesn't mask their flavor with bacon or other strong flavors. It's so easy to toss together and pop in the hot oven along with whatever else you're roasting. Simple and perfect! If you don't like brussels sprouts you've probably never had them cooked well and from fresh. Fresh sprouts, properly trimmed, and cooked like this are a whole different experience than frozen or canned and boiled to smithereens. Tip: Do like the directions say and TRIM the woody base off and REMOVE the outer leaves. Trimming the sprouts really does make a difference!

Coconut Curry Tofu

VERY good. The base sauce for this is simple and tasty. You can easily use this for a "leftovers" meal at the end of the week when you need to get rid of big and ends of veggies.

All American Roast Beef

This is it. Your basic, simple, fool-proof Sunday roast. I think the bad reviews are from people who were expecting POT roast instead of a rosy, thinly-sliced, roast beef. Although the directions are simplistic, they are important. The cut matters, the time matters, the temp matters, the resting matters. Too much beef for you? No problem because it's excellent the day after for sandwiches.

Brunch Strata

FANTASTIC. Period. Okay, not period...this is so simple to make and is perfect for leftovers. Take all those bread heels or slices of french bread that went hard over the week, take your leftover cheese, your leftover meats, your leftover veggies and with hardly any effort or time you have a wonderful, hearty, filling, and delicious brunch dish. It's nothing like those horrid "egg casseroles" people make...this has real flavor and depth. You can confidently substitute any cheeses, veggies, and milks...cottage cheese, feta, buttermilk, skim milk, any sort of veg. This comes out great every time and you can freeze individual squares for a quick and tasty meal any time. It's even good cold the next day. I especially love that I can throw it together and cook it hours (and even days) later. Perfect leftover recipe!

Strawberries with Balsamic Vinegar

Simple and divine! I love it when something so simple and easy delivers excellent results. The balance of tangy vinegar to sweet sugar to sour strawberries is perfect. And what a fun surprise! You would never think that vinegar and strawberries would be friends, but they actually improve the flavor. I always use this if my strawberries aren't the nicest...those horrid white/pink ones you get in the winter.

Italian Confetti Pasta Salad

This recipe is worth trying just for the dressing. I was skeptical, but it really is quite good. I prefer more veggies and fresh herbs, but the basic sauce here is perfect for adjusting to your own tastes.

Pumpkin Crumb Cake

Easy and delicious! I brought this to the family Thanksgiving dinner instead of pumpkin pie and got nothing but raves. I followed previous suggestions to double the crumble topping. It really is a good substitute for (if not improvement on) the old, standard Pumpkin Pie. I will absolutely make this again!

We LOVE this egg salad. Don't let the lower-mayo fool you...it's VERY creamy and good. We've made this dozens of times and it's great for sandwiches, salads, and appetizers.
