My favorite things to cook
I love a nice spicy dish that is full of simple flavors! While nothting beats a great steak, my all time favorite dish is meatloaf made with corn bread crumbs instead of bread and stuffed with Pablano peppers and onions.
My favorite family cooking traditions
I tried to help my wife and her father cook a Thankgiving turkey once. When asked how I could help, her father sent me to the store for a bunch of random items. When I retuned, I discovered two things; 1) we already had all that stuff and 2) Sometimes a dad just wants to be with his daughter. It was just about the sweetest thing I ever saw!
My cooking triumphs
No one likes a bragger, but my meatloaf did win an award! - at our Guide Dogs for the Blind puppy raiser meeting!
My cooking tragedies
Where to start? How about the time I started cooking with Indian spices and finished with Mexican spices? What a disaster! Another classic is the burgers I attempted to embelish that my children re-named "Dog Food" burgers. Funny thing is, even the dogs wouldn't eat this slop!

Shrimp Burritos
Very well done. But at 866cal/serving I would not call it healthy. The Spanish rice is fantastic! The sauce is fantastic! I would suggest eliminating the mayo from the sauce and adding so thinly sliced cabbage for a slightly healthier alternative.

Healthier Slow-Cooker Chicken Tortilla Soup
I added some tomitillos and used pasilla peppers for a spicier soup as well as a some fresh oregano and kafir lime leaves. I strongly suggest you roast a chicken stuffed with a lime and use what's not meat to make broth. Remove the fat from the broth and use in place of water. A very nice soup that goes great with corn bread, fresh cilantro, avacado, & fresh limes.

Irish Shepherd's Pie
Wow! This is great! Only sub was chicken broth for water and I went long on the Dubliner cheese too. For onions I like to use Shallots as i love the flavor. Very nicely done, Chef John! All who tried it loved it.
