Ten Minute Enchilada Sauce

I think this sauce tastes much better than the canned versions from the store, those canned ones don't have ANY flavor. This recipe keeps in the fridge for a long time, too.

Baked Kale Chips

these are a very healthy alternative to conventional chips. Mine were very strong on the kale bitternes side, but, after I added some garlic powder they were much improved, and everyone ate them up!!

Chicken Cordon Bleu I

I thought it was good, but, I didn't have bread crumbs, so I used half potato chips and half ritz crackers, rolled the little parcels in melted butter, didn't see the need for the egg dip, that tasted great...until I put the sauce on it! Now I am wishing I had left it out or put it on the side, since it soggified the crispy crust I had!! A little voice inside told me not to, but I did it anyway. Why do I do that? I also did the 400 degrees for about 25 mins. Live and learn

Grandma's Lemon Meringue Pie

this pie is just what I was craving! I did add a healthy teaspoon of vanilla to the custard, it seemed to smooth out any bitterness, one of my lemons was strangely bitter??...but, otherwise perfect. I also wait until the pie is cooled to add the meringue and then pop it into the oven for browning...this rings my bell!

Yummy Sweet Potato Casserole

delicious! wanted to "healthy" it up, so...added some dry uncooked oatmeal to the topping, which I also cut the sugar in 1/2, and used agave sweetener in the potatoes, almond milk subbed for cow's milk, (I have lactose issues), and upped the amount of pecans, other than that, I loved it just the way it is!!!!! lol
