Turkey Brine

I cut this recipe down to use on a chicken and substituted apple juice for some of the broth. The sugar in the juice gave it a beautiful brown color. Loved the flavor the seasonings added to the bird, and the gravy was extremely rich and flavorful.

Banana Gingerbread with Vanilla Glaze

This made a light tender loaf and the glaze was nice and thick and set up well, but I'm giving it a middle of the road rating as the combination of the gingerbread and banana bread flavors was just not as enjoyable as anticipated. It might be better without the strong molasses taste and just the spices alone, but as the molasses is central to the overall success of the recipe, it would require some reworking. We enjoyed the chance to try something new anyway. Thank you for sharing the recipe!

Homemade Vanilla Extract

So much fun to make and wait for. I would go in to the cupboard every once in a while just to admire and shake the bottle! I started mine back in the spring to have ready for Christmas gifts. Recipients were intrigued and thrilled with such an unusual and useful gift. I will try more beans next time though, as it didn't seem as strong as it should have.

Cinnamon Pumpkin Waffles

These were very very good. I made them for a brunch I was hosting and got rave reviews along with requests for the recipe. I served them along with fresh whipped cream and spiced syrup to top. They were the star of the breakfast.

Pumpkin Turkey Chili

I believe I enjoyed this recipe more than husband did. He found it bland so perhaps I will adjust the seasoning next time and also try using ground chicken for more flavor. It is a great way to use up leftover canned pumpkin.

Nana's Favorite Fruit Cobbler

The crust is, as described, a lot like a sugar cookie. I tried this recipe on for size as it looked good for a change, but I believe now I prefer a more traditional cobbler. It was all just far too sweet, and rich/oily, too. Reduce the sugar in the crust, and replace the oil with butter, leaving out the butter in the fruit mixture all together.

I am sorry to have to make this a 1-star, but oh dear, we could not eat them. They tasted like sun dried tomatoes, not bananas. Not sure where things went wrong....they took a lot longer to dry than the recipe mentioned. Maybe that had something to do with it. Oh well, it was all part of fun kitchen experiments with my grandchildren. We turned out other nice treats, and at least bananas are cheap! Perhaps someone else will be successful with this one.

Apple Crisp Cups

I needed a one-bite type dessert for a group function so I thought this recipe would be a good bet. I just found these to be much too labor intensive. While they were nice tasting overall, I thought the crust and topping overpowered the apple filling so that the filling could hardly be tasted. I will stay with my traditional way of making apple crisp and find a simpler one-bite treat next time.

Kelsandra's Pumpkin Cinnamon Rolls

After looking over this recipe and reading it's reviews, I decided I was feeling adventurous enough to take it on. This is certainly not a typical cinnamon roll recipe, from the ingredients right down to the rising pattern, so I knew that deferring specifically to how it's written would be my first step. I made sure not to use fat free evaporated milk and I used olive oil, not vegetable oil. Olive oil in baking often produces wonderful results, I have found. I did not find the need to add extra flour. 5 cups was perfect. I've no doubt adding extra flour would have affected my results. Note that I missed the 'cook's note' at the bottom of the recipe upon first review, so popped the buns straight into the oven. I must say we enjoyed the results, finding the rolls moist and delightfully flavored. The most remarkable thing about this recipe is how moist and delicious the buns were still, a few days later (only two of us in the household). A typical cinnamon roll will only last a day before becoming stale. What a delightful surprise this recipe was.

Decadent cookie that is true to it's name and description. VERY fudgy and rich. Do not overbake these, and make sure you let them cool completely, as the recipe directs, before transferring to wire rack.

Apple Pie Coffee Cake

I would give this 3.5 stars. This was not bad for what it is, which is semi-homemade. I normally bake only from scratch, but on this occasion needed to bake several items in one day for a fundraiser, so I chose a few 'shortcut' recipes. I was not at all disappointed in this one. Decrease the baking temperature to 325 and bake longer, to be sure the cake around the filling bakes up without being wet. This does have a somewhat box cake taste but then, it mostly is! I think you would notice that more if you were used to baking all from scratch.

Buttermilk Mango-Berry Crumb Cake

This is a very nice coffee cake recipe. But then, it's hard to reinvent coffee cake as the recipe, and slight variations of it, have been around since time began. Although, I did enjoy the unusual addition of mango in combination with the raspberries. I have always used buttermilk in baking - it makes a world of difference. So I was glad to see this recipe utilizing it. Nothing needs changing here, and I would use this recipe again. *I am updating my rating as I recently noticed when looking for a recipe through my reviews, that I mistakenly gave this a 4 rating when I do believe I meant to give it a 5. This recipe did not need any adjustments so I shouldn't have given a 4. I admit I'm an old lady so that will be my sorry excuse.

Butterscotch Oatmeal Cookies II

I was looking for a change from my old stand by oatmeal cookie recipe so decided to try this one. I learned that I do not like the addtition of butterscotch chips in an oatmeal cookie. I think that is definitely a personal preference, but as it is such an important part of this recipe, it factors in my review. I also thought these were a little heavy on the butter as they were rather oily and flat.
