This is soooo good. Here's how I do it: I make just a half loaf at a time and use two whole bulbs of garlic. I set a bowl with 1/4 cup butter and 1+1/2 tsp parsely on top of the toaster oven while I roast the garlic in a toaster oven on 350 for 1hr. While I'm using my garlic press (so messy!) to finish the paste I have the toaster oven pre-heating to broil. I don't add the Parmesan to the paste, I sprinkle it on top of the bread after spreading on the butter paste. Then I pop them into the toaster oven one at a time. While the second one is melting I shred some cheddar onto the top of the first one. Then I pop the first one back in to melt the chedd while I grate chedd onto the second one. Then pop the second one in, cheese melts, and BAM you're done and believe me, your date will be impressed ; )
