Butterscotch Pumpkin Pudding Cake

I made this twice. The first time I followed the directions, but the second time I used chocolate cake mix and added a handful of butterscotch chips. It was pretty good as written, but I liked it much better with the changes. The chocolate mix seemed to help cut some of the sweetness of this recipe.

Glazed Mint Brownies

These were insanely rich. They were pretty good at first, but after I got about half way through my first and only square, I realized I couldn't finish it. Even my dad, who LOVES sweets and especially brownies, thought they were too much. I might try them again with half of the filling and glaze.

Ron's Bread Machine White

This turned out really good. I had to use 3 cups of all purpose flour because I didn't have any bread flour, and it still came out great, if just a little dense. I would recommend eating all on the day you make it though, since it dries out pretty fast.

Italian Wheat Rolls

I adapted this for my bread machine and made it with all whole wheatflour, and it was pretty good. Here is what I did, for anyone who is interested. First, I had to halve the recipe so it would fit in my machine. I used a little over a cup of warm water instead of using the boiling water. I used all whole wheat flour instead whole wheat and bread flour. Then I just adding everything in the order suggested by my bread machine instructions, set it to the "dough" cycle, and then followed steps 4 and 5 from the recipe. The rolls turned out really tasty, light, and fluffy. :)

Chicken and Broccoli Braid

I did not care for this at all. It ended up kind of mushy and the flavor of the crescent roll was overpowering. It looked all right, but I couldn't eat more than a couple of bites.

Almond Tea Cakes

These turned out great, but I did make a couple of slight changes. I doubled the filling, which I would definitely recommend, and I baked them in regular sized muffin tins since I didn't have mini ones. Baking them in the regular tins worked out fine, though next time I would decrease the baking temp a bit because the cookies ended up a little too dry while I was waiting for the filling to cook all the way. Still, the family loved them!

Southwestern Egg Rolls

These were really good! They tasted a lot like the ones from Chili's. I kind of just eyeballed the ingredients. I also ended up using four 10-inch tortillas instead of the 6-inch ones because that's what I had on hand. Like other reviewers, I baked mine. I sprayed the bottom of a pan and then sprayed the outsides of the egg rolls. I baked them for 15 minutes at 475, turning them midway through. They came out nice and crispy. I will definitely be making these again soon!

Quick Creamy Spinach and Tomato Pasta

My dad really liked this, but I thought it was just okay. Like others, I thought it was pretty bland. I even used stewed tomatoes, oregano, sauteed onions, and chicken, but it just didn't taste like much. I gave it 4 stars instead of 3 because my dad liked it so much, and it can be hard to get him to eat vegetables. o_o

Salsa Chicken Rice Casserole

I really liked this, but I did make a couple of small changes. I used brown rice instead of white and a Mexican cheese blend instead of cheddar and Monterey. I also added a can of corn (drained) and used extra onion. Instead of layering, I just mixed everything together except for half of the cheese, which I sprinkled on top. This recipe is super easy and makes a ton of food!

Cabbage Rolls II

These were pretty good, but I think I would change some things if I make these again. I've never had cabbage rolls before this, so I don't have anything to compare them to, but I would add more onion, more rice, and some garlic powder. I would also double the sauce. I might also add some Worcestershire sauce to the meat. I baked these covered at 350 for an hour because I don't have a slow cooker and they turned out fine.

Creamy Artichoke Pasta

This was incredibly delicious! I can't wait to make it again. I only made 6 oz of pasta and had just enough of the sauce. I don't know how you could make this as is and have enough for the full 12 oz of pasta. I couldn't find marinated artichoke hearts at my grocery store, so I just bought the regular canned ones (in water) and marinated them myself. For the marinade, I used generous dashes of dried basil, thyme, and oregano. Then I added about a teaspoon or more of minced garlic, some olive oil, and some vinegar. It turned out great. I also boiled a boneless, skinless chicken breast for about twenty minutes and cut it up, adding it to my plate at the end (not everyone at my house eats meat, so I couldn't add it in the sauce). This is a new favorite at my house!

Mexican Casserole

This was pretty good, has room for improvement. If I make it again, I'll definitely add more corn, add some onion, and skip baking it. Baking it seemed like an extra step and an extra dish to wash. I think it would just as good with the cheese sprinkled on top after it has been dished up and the chips served on the side. I think this would also be really good as part of a taco salad with Doritos instead of tortilla chips.

Bountiful Garden Zucchini Enchiladas

These were so amazingly good! I added a little bit of extra cheese to the cheese sauce and used a Mexican Blend instead of Monterey because that's what I had on hand. Even my Dad really liked these, and he usually complains about anything that doesn't have meat! I will definitely make these again.

Egg and Spinach Casserole

Following the advice of others, I skipped the butter, and boy am I glad I did. I think with all of the cheese in this, the butter would have made it way too greasy. I did also add some garlic powder to this and it was super delish. I might add more spinach and onions to it in the future.
