Salsa Chicken Burrito Filling

Great, simple recipe with lots of taste. Garnish with sour cream, guacamole (or plain avocados), fresh chopped tomatoes, grated cheddar, refried beans and lettuce, and it's a meal in a minute. The 2 chicken breasts make enough for at least 4, so it's a great way to stretch meat. Love it!

Fresh Southern Peach Cobbler

Excellent recipe; it was gone in 20 minutes flat (4 teenage boys!) when served hot with cold ice cream. I agree with previous reviews - DOUBLE the topping (but not the sugar/cinnamon bit at the very bottom), because there's not enough to cover the peaches as it is. And make sure you watch it carefully the last 10 minutes of baking, because it will brown (or blacken!) very quickly with the sugar coating on top. MMMMM!

Best Lemonade Ever

Great recipe! Just for variety, I reduced the sugar to 1 1/4 cups, and threw 3 big strawberries in the blender with some of the lemonade, just to chop the strawberries up, then poured it back into the lemonade.

Saskatoon Pie

This is a great recipe! Not too sweet or too tart,or too runny or too dry; it was just right. Because I had extra saskatoons, I used 5 cups of berries and upped the sugar by another tablespoon, which filled the crust nicely (4 cups wouldn't have been enough). Great recipe, and a nice way to enjoy the fruits of the family activity of going berry picking.

Kielbasa and Cabbage

Very tasty! I left out the caraway seeds, shredded the cabbage, and added a little cheddar cheese at the very end to let it melt all of the flavours together. One of those real comfort meals.

Beer Braised Pork Loin

This was excellent, a great meal for a big crowd. It made gallons of gravy, which is a plus!! A couple of hints: I used a meat thermometer in the pork loin so it doesn't overcook and become dry. 170 degrees is perfectly done. I omitted the cloves (not to my taste), and when making the gravy, I threw about 1/3 cup of flour in the blender with everything else, and then cooked it all together on the stove for a few minutes to help it thicken. Delicious on mashed potatoes!

Perogie Casserole

Great basic crowd-pleaser. I made a couple of small changes, as others have: - Boil and mash potatoes (versus roasting) - Add 3/4 c sour cream and 1/2 tsp onion powder to mashed potatoes - Fry 2 - 3 chopped onions along with the bacon for the topping, and serve with sour cream. Yum!
