Batman's Best Caesar Dressing

Too Olive Oily & bitter! My husband loves Caesar dressing and I've had some I've like at good restaurants, but am generally not a fan of bottled Caesar dressing. My hubby is fine with the bottled stuff--particularly Ken's Light Caesar. Neither of us liked this. Hubby said we'll use the rest but to please not make this recipe again. I followed the recipe, but left out the anchovy paste. Maybe the anchovy paste would help. Might try it next time. First off, it was way too Olive Oily & bitter! It tasted like olive oil with other stuff in it. (I make a dressing with olive oil, lemon juice, salt & pepper and we like that--somehow, this dressing was more olive oil tasting than my concoction) I added more parmesan to the mix to see if it would reduce the bitterness and oiliness, but it didn't. Might be too much garlic, too. I used 3 large cloves. We used it on salad straight away. Don't know if it will be better tomorrow, as the author suggests it best after sitting in fridge "for a day or two." Also, the dressing separates. Don't know if that is normal. Might be the mustard powder that caused the bitterness. I'll try dijon from a jar next time.

Sturdy Whipped Cream Frosting

LOVE this frosting and I always get compliments on it. First time I made this it was perfect. Second time I over-beat and whipping cream became clumpy like bits of butter. Not sure how this happened as I was waiting for “stiff peaks” which never quite got there and then it started to get clumpy-and-liquidy, rather than smooth and frosting like. The last time, for her 3rd birthday, I turned off the beaters as soon as I saw the tracks forming and staying after passing through the beaters and it was perfect. All of our parties have been out doors in August and the frosting has always held up well. This year, making a big cake for our huge birthday party was too much, as we have a new baby, so I ordered an all natural cake from Whole Foods Bakery. While it was delicious and beautiful, after a while, the Whipped Cream frosting started to fall apart and melt. This frosting always stays together. The first year, I added a little beat juice to a small portion for pink writing. Last year, I added homemade raspberry sauce for color and flavor. I had to be careful to not add too much, so it wouldn't liquify. It tasted great! Also piped it(with the raspberry and without) onto a Nilla wafer cookie and topped with a gummy bear(all natural) for birthday treats for kiddo's preschool class for a treat that's just the right size and doesn't result in a discarded, licked clean cupcake. This is my "Go-to" frosting and people always ask for the recipe!!!

Janet's Rich Banana Bread

After reading several reviews about unpleasantly dark bananas that had been sliced, I mashed mine. My bananas were overripe(thus my search for a Banana Bread(BB) recipe) & I had 3 so I used them all. Some pieces were a bit bigger, but have not changed color, yet(the bread is still hot, though with a couple of slices missing!) I baked in a glass dish for about 75 minutes. No problem with overflow. To compensate for the extra banana, I added maybe a Tablespoon more of flour. I also used more walnuts, and maybe 2 Tablespoons LESS sugar(to make up for the extra banana and the bananas being way ripe and super sweet) but I didn't change anything else. It smelled amazing while baking. I thought about tenting with foil the last 30 minutes, as mentioned by another reviewer, but there was no need--it came out just a touch darker only in the very corners, with the top being golden and perfectly cracked. It was delicious, super moist. Would be a little better if I hadn't used 3 bananas, but stuck with 2, like the recipe states, but still delicious! The sour cream balances the sweetness and adds moisture. I LOVED the vanilla in this recipe, as opposed to cinnamon like most BB recipes. This will be my BB recipe from now on! ***Update: I made the bread a week ago & kept in tupperware on the counter for a couple of days, as we munched away. After that, stuck it in fridge. Just ate one of two remaining pieces(after a few minutes in toaster oven). Still delish & pretty!
