Chef John's Italian Meatballs

This is now my homemade Italian meatball recipe; I will never use another recipe. I had no issues with the meatballs being too "liquidy", and there was hardly any grease at the bottom of the baking pan once they were done cooking. I love that he has us cook the onion before adding it to the mix - I don't like crunchy chunks of onion in my meatballs, which is how my mother's were (sorry Mom). This is a great base recipe - add different spices and amounts to your liking. As a side note, I always know I've found a good recipe when my husband asks, "Hey, how'd you make that?!" He even says the recipe is a keeper, and so it shall be. Thanks for sharing it.

Raspberry Pie I

Raspberries are my favorite fruit, but I never had a raspberry pie that I really liked until I made this recipe. I've made it a few times and it has never turned out soupy or runny. My parents aren't big pie fans, but they request this pie at nearly every family get-together. I do a lattice crust, brushed with an egg white and sprinkled with raw sugar. The pie is sweet, but you also get the tartness of the raspberries. I also like to top my slice with whipped cream. I'm actually preparing to make this pie right now for my dad, who requested it for his belated Father's Day cookout. Thanks for the recipe, you have me and my family hooked!

Great Pumpkin Dessert

This is a fantastic fall dessert! It's so easy to make, and it's especially easy to please a crowd with this dessert. I served it with homemade whipped cream. I usually don't like walnuts or any other type of nut in a soft dessert (it's just a texture thing for me), but I thought the walnuts were great because of the already "crumbly" top. Definitely a keeper in my Recipe Box.

Chicken Pot Pie IX

To me, chicken pot pie is the ultimate comfort food. Nothing like this dish when it's snowing and blowing outside. After reading the reviews, I had to try it, and I'm so glad I did! The flavor is excellent, and I'll never again buy a frozen pot pie after making this. I gloated on Facebook about the chicken pot pie recipe I found on Allrecipies, and I had at least ten friends ask me where I found the recipe and THEY all loved it too! My mother-in-law liked this chicken pot pie so much that she threw away her other 20-year-old recipe. I think that says a lot!

Fast Chicken Soup Base

Classic Chicken Noodle Soup

I love homemade chicken noodle soup, but I had never tried making it myself, so I turned to this recipe. It's delicious and I love using the Fast Chicken Soup Base. It's a keeper!

Too Much Chocolate Cake

Bravo! Best chocolate cake I've ever had. My mom, who doesn't like any kind of cake, took one taste of this cake and she loved it. It's very moist and super rich, so have a glass of milk on-hand! Best part about this recipe is that it's easy to make! I've spent much longer making desserts that aren't as good as this one. I used dark chocolate morsels instead of semi-sweet, and it was yummy. Also, the recipe itself doesn't call for a glaze even though there's a glaze in the photo, so I made a simple chocolate glaze to pour on top. If you've gone this far with the chocolate, might as well go all the way! This recipe is definitely going in my recipe box, and you bet I'll be making it for years to come.

White Chocolate Raspberry Cheesecake

"That was the best cheesecake I've ever had!" was a comment I received after making this! And I have to agree - I made it for a baby shower and there were plenty of leftover desserts, but the cheesecake was all gone! I took the advice of someone else here who said they doubled the amount of white chocolate morsels used, as well as using a 10" springform pan. Not only did the cheesecake taste wonderful, but it was very "pretty". A dab of homemade whipped cream w/a raspberry on top and white chocolate shavings made the cheesecake "look like a gourmet dessert" (another compliment!). I've already had people tell me they want me to make it again and I can't wait! The extra prep required by this cheesecake compared to regular cheesecakes is well worth it. It was a crowd-pleaser!

Grandma Ople's Apple Pie

Delicious and easy! The hardest part about it was peeling the apples (I don't have a mechanism to do it). I like the apples to be soft and this is the first recipe that actually made them soft (I sliced the apples VERY thinly). If you still like them a little crisp, you can make the apple slices a little thicker. Betty Crocker has nothing on this recipe! I also added some cinnamon to the butter/sugar mixture and it was yummy. Rave reviews from my friends and family and while it's not like this recipe is drastically different from anything I've ever tried, it's still the BEST!
