The Best Meatballs

Reviewed: Nov. 18, 2014
THIS is coming from an Italian who has made her meatballs like this recipe for years just like my mom made. Only difference is I soak my Italian bread in water and squeeze out the liquid and crumble it into the meat and use milk instead of water for more moisture. So glad the video emphasized using FRESH ITALIAN PARSLEY and not the curly stuff. Also the fresh garlic and the good grated cheese are what makes these over the top. PLEASE, PLEASE NEVER COOK THE MEATBALLS IN THE SAUCE. You won't get that crispy outside, just boiled meat. Some people roll their meatballs in bread crumb before frying. You could put them in the oven, but I like frying best.

Homemade Chicken Soup

Reviewed: Oct. 20, 2014
Pretty much the way I make soup. May I suggest adding the center tender stalks AND the leaves. The leaves add so much more flavor. Also if you wait until the next day to serve this you can lift the solidified fat off the top of soup before you reheat it.

Chef John's Perfect Mashed Potatoes

Reviewed: Sep. 15, 2014
This is exactly what I do only I use regular all-purpose potatoes. Mashing them with a masher is the way to go. Don't use a mixer unless you like Elmer' s glue consistency. Also I warm up the milk in the micro first.

Caprese Appetizer

Reviewed: Aug. 22, 2014
I haven't tried this yet, but I've made lots of tomato salads. I am going to try this ,but add some fresh or granulated garlic and let it marinade for a which is what I do with all my tomato salads. Oh, and please don't add vinegar to tomato salad per my Italian grandma..... tomatoes already have acid. I'm glad Jessi didn't.

Ice Cream Sandwich Dessert

Instead of making one big 13x9 cake, I used 2 smaller cake pans to make 2 smaller cakes! I wrapped them well and put them in the freezer for unexpected company. DELICIOUS !!!!!!

Yummy Garlic Croutons

Reviewed: Jun. 26, 2014
Don't throw out that old bread, make this !!!!! I made these exactly as stated in recipe. Store-bought doesn't come close to the terrific flavor and crispness of these. These are great to eat as a snack. I make these all the time. My sister-in-law even asked me how to make these, and believe me it must have killed her to ask.

No Cook Pretzels with a Kick

THESE ARE SO GOOD ! It was so hard not to eat them all before I gave them to my daughter. I bought cheap pretzels and had all the other ingredients. I would definitely make these again.

Quick and Easy Chicken

Reviewed: Jun. 3, 2014
I'm always looking for recipes using chicken breasts since I'm on a perpetual diet. This was so tasty ! I think I would only double the sauce if I was going to serve it over rice, otherwise there's enough sauce.

I followed the recipe exactly ,except I used six jumbo muffin cups. I baked them 5 minutes longer. Delicious! They looked like the giant muffins you buy at your grocery bakery shop.

Best Cream Of Broccoli Soup

Reviewed: Feb. 27, 2014
I made this exactly as written except I used frozen broccoli and added a small diced potato to the celery and onion. At the end I added a cup or so of shredded cheddar cheese because my daughter's boyfriend wanted cheesy cream of broccoli soup. It came out just right. Was good even without the cheese.

Chocolate Crinkles II

These were moist and delicious. I put the dough in the freezer for about 45 minutes. They baked up high and puffy. I will definitely add these to my Christmas tray. Most likely I'll be making them several times before then.

Carrot Soup

Reviewed: Dec. 14, 2013
I added a teaspoon of fresh chopped thyme in place of the dill and did not use butter. I softened the onions and carrots in 2 tbsp olive oil. I agree with the reviewer who said to use only organic carrots. They are definitely sweeter.

Roasted Pumpkin Seeds

I made these exactly as stated in the recipe. They were DELICIOUS. Had a hard time not eating them all myself. I had about 8 pumpkins. After they cool completely I am going to seal them in 4 oz packages using my Foodsaver and using them as part of treat baskets for Christmas.

Pasta with Fresh Tomato Sauce

Reviewed: Jun. 24, 2013
This sounded good until you got to the part with the bottled dressing. Instead, I would have sauteed some garlic and olive oil and then proceeded from there.
