White Chocolate Macadamia Nut Cookies IV

I made these for an awards ceremony for some of my students (grades 7-12) and they devoured them. There wasn't a single one left. My husband and I ate the few that broke when I moved them to the rack (they were very soft when hot), and we thought they were great. I made the recipe exactly as written.

Potato Chips

The chips were really good, but 1) they took 9-10 minutes per batch in my microwave, and 2) they stuck to the plate really badly. I wanted a quick snack but it ended up being kind of a pain in the you-know-what, so I don't know if I'll make them again.

Key West Chicken

I had six chicken breast halves, so I doubled the marinade, but otherwise followed the recipe exactly. I let the chicken marinate for a couple hours. I thought it was good, not great, but my husband didn't like it all. I probably won't make it again.

Carrot Cake Muffins with Cinnamon Glaze

I've made these twice, once as mini muffins (I took them to work and they were a big hit) and once as regular-sized muffins (when my in-laws came to visit; my MIL especially loved them). The only change I made was to reduce the sugar a bit (and to use the lemon juice with milk trick for the buttermilk, which we don't have here). The muffins were moist and tasted great. The recipe makes a lot of muffins, but they do freeze well.

Quick Lemon Poppy Seed Muffins

These were good, really 4 1/2 stars. I added a bit more lemon juice and zest and used lemon extract instead of vanilla. I made mini muffins and took them to work and they disappeared very quickly. :)

Juicy Peach Crisp

Very good recipe. I cut down on the sugar a bit, but otherwise made it as written. Thanks to the reviewer who suggested putting the peaches in boiling water to make peeling them easier. It worked like a charm! I made this for a barbecue, and my guests loved it. Will make it again.

Double Tomato Bruschetta

I made this recently for a barbecue with friends, and it was great. I did make a few changes. I seeded the plum tomatoes before chopping them, and let the tomato mixture sit for a couple hours to blend the flavors. I also skipped the cheese and the broiling afterwards. I just put the toasted baguette slices out on the table with the bowl of the tomato mixture, and everyone just helped themselves. It got good reviews from everyone, and I will definitely make it again.

Best Butternut Squash Soup Ever

I made this pretty much as written, except that I used a whole squash since it was pretty small. The only other change I made was to add a dash of ginger. I did have to simmer the squash for about 25 minutes until it was tender, though. I think the taste and the texture are perfect. Thanks for the recipe!

Maple Walnut Pumpkin Pie

This was the hit of our Christmas dinner. I followed the directions exactly, and used the Graham Cracker Crust I recipe from this site (without the optional cinnamon, and using digestive biscuits instead of graham crackers, which are not available here). My guests said this was "wicked", and I'd have to agree. It was fabulous! I'm sure I will be making this again.

Spicy Garlic Lime Chicken

Great recipe. My limes didn't have much juice, so I had to add some lemon juice as well (I used 4T total of this mixture instead of 3), but otherwise I followed the recipe as written. The flavor was excellent, the chicken perfectly done and moist. Spicy but not overpowering. My son has asked me to make sure I make this dish again, and I definitely will.

Mmm-Mmm Better Brownies

I made these on the spur of the moment and they were great. Takes no time at all to mix everything together (with ingredients I always have on hand - I left out the nuts), and they are very moist and chocolatey. I used olive oil, so they were healthier than ones made with butter, too.

Quick and Easy Brownies

Following the advice of other reviewers, I reduced the flour to 1 cup and increased the cocoa powder to 2/3 cup, because I don't like my brownies cake-like. The brownies were moist, with good chocolate flavor and a nice dense texture. I used a glass 9x13 pan, and they were done in 30 minutes. I took them to a BBQ and everyone there loved them (they disappeared very quickly). The best part is they were as quick and easy as their name indicates.

Rosemary Ranch Chicken Kabobs

This is excellent. I cut down on the oil (used 1/4 cup) and may even cut it down further or replace it with water the next time I make this. The chicken was so tender! I think I will try adding veggies to the marinade and threading them onto the skewers as well.

Baked French Fries II

Made these for lunch today and they were a big hit with my husband and son (I left out the basil, though). If you don't have any cooking spray (I didn't), you can pour a small amount of oil (I didn't measure, and I used olive oil) in a ziplock bag with the salt and pepper, add the potatoes and turn over several times to coat all, and then add the cheese and do the same. I used parchment paper on the baking sheet, and I had to cook them a little longer than stated; I think maybe 35 minutes would be about right, in my oven at least. My husband said I could make these every day as far as he's concerned! Thanks for sharing.

Bacon Roll Ups II

I made these for New Year's Eve. My husband isn't fond of cream cheese, so I used a cheddar spread for most of them and cream cheese for a few. We both preferred the cheddar ones, so that's what I will use in the future. This was a great appetizer, not difficult to make, and even reheated well in the microwave. Thanks for sharing!

Sarah's Banana Bread Muffins

I had 3 very ripe bananas I had to use, so I thought I'd try this recipe. I did cut down on sugar a bit (3/4 cup) and used whole wheat flour instead of white, but otherwise followed the recipe. The muffins were somewhat bland, and I thought they were a tiny bit dry. I baked them for 30 minutes and that was too much, I think. I'm sorry, but I wouldn't make these again. I had to throw most of them away because no one would eat more after they tried one.

Garlic Parmesan Olives

I served this as an appetizer before Christmas dinner. Apart from using 1/2 black and 1/2 green olives, I followed the recipe exactly, and the result was great. Easy and tasty! Will make again.

Tomato and Mozzarella Bites

Taste was good and it made an attractive presentation, but the dipping sauce was messy and a nuisance. I think next time I would drizzle it over the tomatoes etc. on the plate before serving.
