Chocolate Chocolate Chip Muffins

I made these tonight, in fact some are still in the oven. This makes a lot of batter. My 2 quart bowl was filled to the brim. I did not use 12 oz. of unsweetened chocolate - they do not need that much, and I also cut down on the sugar (way too much). I used 4 squares of cho. and about 2 1/4 c. sugar. These are good - made mini muffins and reg. size and have a lot of muffins, which I know my family will love. The addition of oatmeal is a good idea, and could probably have used more.

Mexican Cornbread Salad

I found a similar recipe to this in Southern Living magazine last summer. I added teh chiles TO the corn bread mix along w/ a little taco seasoning to make a mexican corn bread. I also used 1 can black beans instead of pinto, layered w/ romaine lettuce, real bacon instead of the bits and use Montery Jack cheese instead of plain cheddar. Overall this is a great salad that you can adjust to your own liking! It does make a huge bowl, so make sure you've got plenty to eat it!!!

Grandma's Secret Pie Crust

This is a great pie crust! I've been using it for about 20 years! I do use 5 Tablespoons of ICE water though, but that's the only difference. I typically get 3+ crusts from it. Flakey and delicious! My dh says it IS as good or better than his mothers! Can't have a better compliment than that!

Chocolate Chip Cheese Ball

This is a wonderful dessert that always gets rave review and comments! For Christmas I rolled it in mini chips, chocolate jimmies & red & green jimmies. I'm not big on the pecans with it personally. I also advocate using only real butter and "real" cream cheese. I wouldn't want to waste such expensive ingredients on something that didn't turn out!

All Day Apple Butter

This was a very easy and very tasty recipe! I followed everyone's advice reduced the sugar to 2 cups. I also used more than 5 12 lbs. of apples - more like 8 to 10 lbs. and it was still sweet enough. After peeling the apples, I chopped them in my food processor and then cooked for 18 hours. I used my stick blender and things smoothed up wonderfully! I'm getting ready to can it right now in 12 pint containers. This will make a wonderful addition to our Christmas gift baskets! Thanks for this great recipe!!!

Pumpkin Cheese Bread II

This is a very delicious, moist bread and the presentation is fabulous! I didn't have the orange zest or cloves but have added them to my shopping list before making this again! Very easy to prepare too. We plan on using this beautiful bread as hostess & teacher gifts throughout this holiday season and know that it will be enjoyed by all. Thanks Tina for this great recipe!

Wonderful Yogurt Cake

Very moist and very delicious! I used a flavored yogurt, and while you couldn't taste a distinct flavor, it was delicious! I also used 1/2 white sugar and 1/2 brown sugar. I served with fresh berries & cool whip! This one will be made again!

Holiday Chicken Salad

This salad is perfect! I love the addition of dried cranberries, and I've used the different flavors of those too. I do omit the celery - that's not my thing - but there's plenty of crunch with the pecans. I served this on warm crossaints - perfect for a luncheon!

Sweet Green Bean Bundles

I've been making these for years - always receive rave reviews and they really make "something special" for those fancy dinners or buffets. These are a staple for our Thanksgiving & Christmas meals too! I do add a dash of soy sauce, and put more green beans in each bundle.

Butter Crescents

These rolls are definitely worth the time & effort! I first made them for a small dinner party and made them smaller. Delicious! For Christmas Eve dinner I made them a bit larger, and for a New Year's luncheon, I made them large for use with sandwiches. I've been told that I am to make the rolls for every family event from now on! My entire family loves them, and I love the compliments!

Southern Grits Casserole

These were a hit! I made this casserole for a ladies breakfast, and all the southern ladies dove right in! Even the northerners ate it too! I had reduced the servings by 1/2 and it turned out wonderful. I would however, add more cheese into the grits/sausage mixture. This will be a keeper. I've eaten some leftovers with a salad & roll for lunch. This would make a nice light supper dish too!

Slow Cooker Mashed Potatoes

These potatoes were fabulous! Of course, I made some changes! I used yukon gold potatoes, and pressure cooked them for 10 minutes. I also used low-fat cream cheese & low-fat sour cream. I had leftovers, and these made wonderful potato pancakes too!

Neecie's PBJ Bars

These cookies were enjoyed by the adults, but not too much by the children! I used peach preserves as no suggestions were made for the type of jelly. The cookies were very moist and delicious, especially when warm.

Banana Pudding IV

I lightened the calories on this one by substituting non-fat cool whip, low-fat sweetened condensed milk, low-fat cream cheese & low-fat nilla wafers. I loved the addition of cream cheese to this classic dessert! This will be a standard potluck fare for me from now on!

Easy Roasted Pork

This was delicious! I bought a 6 lb. roast and put it in my slow cooker on low for 7 hours. The ginger flavor was infused all throughout the meat. Absolutely fabulous! My company all raved about it! Definitely a keeper and something I will use again for company and special events!

Banana Chocolate Chip Cookies

My son loves these cookies! A friend of ours makes almost the identical recipe, so he was excited that I had learned how to make her cookies. The banana flavor isn't strong at all. If someone would like a more pronounced flavor, I would suggest adding more bananas. The baking powder makes these cookies much more cakelike. Not your traditional chocolate chip cookies, but a staple now at our house!
