Baked French Toast

I took the other reviewers' advice and cut back to 6 eggs, and 1 cup each of milk and cream. You do need to bake it about an hour. The really good thing about this recipe is if you need to keep it warm for a while it's still great. Two guests came 45 minutes late for brunch, and it was no problem to leave it in a 200 degree oven.

Mushroom Risotto

I liked this recipe a lot, but like all risotto recipes I've seen it called for way too much liquid. I used 2 cups of risotto and needed maybe 4 cups liquid all together. I used chicken broth instead of vegtable broth because I added grilled chicken to the risotto at then end.

Chili I

I can see why the other reviewers thought this chili not spicy enough, but that's easy enough to fix with some jalapeno peppers. This recipe was just fine the way it is, especially for my kids who don't like spicy.

Baked Teriyaki Chicken

I used brown sugar in place of regular white sugar, and then grilled the chicken outside. It was very good. I don't know if it would've been as tasty without doing those 2 changes. I made fried rice from a recipe on this website to go along with it.

This was great. I used thin slices of red onion instead of the scallions, and I sauteed the bread cubes in olive oil and a little salt. They were delicious like that. I served them warm over the salad, and then just used a red wine vinegar and olive oil dressing.

Easy Vodka Sauce

I also took the advice of other reviewers and used 2 cloves of minced garlic, 2tsp sugar, and fresh chopped basil. I also by mistake bought only 1/2 pint of cream, and it was just fine. At the end I sprinked on some fresh chopped parsley over the raviolis and sauce.

Cousin Cosmo's Greek Chicken

I liked this chicken recipe....I also used chicken broth to simmer the chicken, with a little lemon zest added to it. I added the spinach towards the end, but I think I would add it sooner than that next time because it took longer to wilt than I thought.

Baked Stuffed Shrimp

This was great. I used a lot of ritz crackers, and not as much bread crumbs. After I made the stuffing, I drizzed a mixture of melted butter and white wine over it.

Baked Dijon Salmon

I do think this was good, although next time I make it I'll add a little more honey and a little less dijon. Also, the topping would have been even more tasty if I had sauteed the bread crumbs and pecans in some melted butter first, creating a "wet sand" texture before sprinkling it atop the salmon.

Basil Chicken over Angel Hair

I made it just as the recipe said the first time, then I decided the next time to grill the chicken, and in the sauce use shallots instead of the onion and garlic. Also, I thought it tasted better without the hot pepper sauce. The fresh basil, tomatoes and parmesan is just delicious.

Pico de Gallo Chicken Quesadillas

The pico de gallo mixture was fantastic! I only modified the recipe a little bit by grilling the chicken, then shredding it and putting on the tortilla with the cheese and pico de gallo mixture. It saved a few steps this way, and tasted great.

Yummy Honey Chicken Kabobs

This recipe was really delicious. I skewered 3 or 4 skewers with just chicken, and 3 or 4 skewers with just vegetables so the chicken wouldn't undercook and the veggies wouldn't overcook. I liked this recipe better than any bottled marinade.

This was very good. I read the reviews, and am glad I halved the butter amount. I also lessened the wine amount by a little bit. The cracker crumbs gave it a wonderful taste.

Deb's Scallops Florentine

This dish was very good, but you definitely don't need to cook the scallops first. They cook just beautifully in the oven. Also, you can save a lot of calories by using milk instead of heavy cream.
