Healthier Soft Oatmeal Cookies

So good! I swapped half the butter for coconut oil. Next time I'll try swapping the rest of the butter for unsweetened applesauce, and I'd love to try these with some dark chocolate. Lots of possibilities - thanks for a great recipe!

Chef John's Banana Bread

Easy and delicious! I made 14 good-sized muffins with this recipe. I omitted the walnuts (my son won't eat them) and sprinkled tourbinado sugar on top prior to baking. I'll definitely make this again - thank you for a great recipe!

Chicken Florentine Casserole

This recipe is definitely a keeper. Next time I will omit the lemon juice because of a personal preferance, but I will definitely make this again. I felt like a gourmet cook when I brought it to the table!

Breakfast Pies

I make these every Easter for brunch, and they are a huge hit! Leftovers reheat nicely too. I recommend using the larger muffin pans (the kind that you make 6 jumbo muffins in). That way, they don't overflow and you can add in extra toppings. You will need to increase bake time though... Thanks for a wonderful recipe!

Quick Black Forest Cake

This cake was great, and super easy. I was a little dubious when I saw the batter, but it came out moist and yummy. I used a tub of cool-whip and a second can of cherry pie filling to garnish the top. Thanks for a great recipe!

Baked French Toast

A soupy disappointment! I put in extra french bread, and it was still swimming in raw egg even after leaving it in the oven for an extra 45 minutes! I think this recipe has great potential, but if I make it again I will definitely drain off any excess liquid before baking.
