Quick Chicken Marsala

Great recipe, good food. I like to do one dish dinners, so I added some asparagus cut to about one inches long as well as a half cup of broccoli stems and a cup of fresh spinach. Great stuff!

Chef John's Perfect Prime Rib

My family celebrated Thanksgiving with my wife's sister, while I shivered and shook with with some kind of crud. On Friday I followed the recipe and technique and was able to present a very good prime rib for the family. Our oven is a good gas unit and the meet was a bit undercooked for all but me. The next time I will increase the minutes at 500 degrees and make some changes in the seasoning. Tonight the leftover roast is simmering in the stock pot with potatoes, carrots, mushrooms and onions for a great beef stew for the family.

Cheese and Bacon Potato Rounds

I needed something easy and quick for an appetizer when my youngest son was home for Spring Break along with his fiance. The next time I am going to do more rounds and offer a choice of cheeses, onions, bacon or ham or whatever is in the cupboard or fridge that sounds good. This recipe also makes a great base for mini pizzas. A little peperoni, mozzarella, onion, mushrooms, black olives, and on an on the possibilities go. Also, I like to turn the broiler for about 90 seconds before removing them from the oven. All I can say is, "Try it, you'll like it."

Paper Salmon

At the age of 2 1/2 years we moved from Boise to the Puget Sound area. Dad worked at the Naval Torpedo Base, Keyport and soon learned to fish for fish. Salmon was a favorite and graced the family table many times over the years. If there is a way to prepare this wonderful, mild and flavorful fish, I have most likely had it. However, the paper method provided a real treat. The flesh maintained is moist and delicate natural flavor. I added a half a pearl onion on each half to added a sweet extra to the flavor. I might try a slice of naval orange the next time. Like the citric acid in the lemon enlivens the flavor, an the orange should give the same effect if not a bit sweeter. This recipe will grace our table many times in the furture.

Grilled Corn on the Cob

Where were you yesterday? I used the same basic method to roast a couple of ears last evening. Add a diced clove of garlic to the mix and it is outstanding.

Artichoke Pie

Who whoulda thought a great tasting, filling and impressive pie could be put together so easily. Especially with these ingredients. I did this for my wife and I a couple of weeks ago and it disappeared in about three days. We ate it as the main dish for dinner. I wished that I had not done anything else as I couldn't get enough. The real treat came the next day at lunch when I took it out for my lunch and shared it with a couple of others. They loved it and could not believe that it was made of artichokes. And it tasted better cold than hot.

Prize Winning Baby Back Ribs

Very good and very easy recipe that the family really went for. I was surprised by the full flavor of the rub yet it did not overpower the pork. Pork ribs are from pork and should taste like pork and not just the sauce or marinade.
