Cheese and Bacon Potato Rounds
I needed something easy and quick for an appetizer when my youngest son was home for Spring Break along with his fiance. The next time I am going to do more rounds and offer a choice of cheeses, onions, bacon or ham or whatever is in the cupboard or fridge that sounds good.
This recipe also makes a great base for mini pizzas. A little peperoni, mozzarella, onion, mushrooms, black olives, and on an on the possibilities go.
Also, I like to turn the broiler for about 90 seconds before removing them from the oven. All I can say is, "Try it, you'll like it."
