Luscious Lemon Snaps

I tried these for a bake sale at school, and everyone loved them, students and faculty. Someone asked me for the recipe, and when I gave it to her, she was so surprised that it was vegan and tasted so good! This is an example of how great vegan food can be!

Curried Pumpkin Soup

This has become a staple for me; my flatmate is rather fussy when it comes to food, and we both just love the slightly spicy flavour this soup affords. I make my own pumpkin puree instead of using canned, substitute vegetable broth for the chicken broth, and I omit the extra cup of water as seems to be common. Sometimes I add a little cinnamon, too. Very good for a different and low-calorie soup.

Beetroot Hummus

Once I had finished this recipe, I was very satisfied with the results, and so were my family members (none of whom are vegan or understand why I'm vegan). Only one caveat: the hummus, although wonderful to eat and not too hard to make, takes a long time to make. Be sure you have plenty of time before starting this recipe.

Barley and Mushrooms with Beans

Much more like a soup than a side dish or anything you could wrap a tortilla around--but delicious nonetheless. It pleased my picky flatmate, which is no easy feat. I did add about a cup of sliced red bell pepper to increase the health benefits.

Red Velvet Cake IV

Very good cake recipe--I've never made or eaten a red velvet cake before this one, so I don't have much to compare it to, but it came out very light and fluffy. Not too chocolatey and a nice Valentine's Day treat for my friends. I used a different icing since cream cheese is not available where I live, but I would definitely make the cake again for a festive occasion!

Award Winning Soft Chocolate Chip Cookies

I'm sorry, but these cookies are not all they're cracked up to be. They're too cakey and there is way too much of a buttery taste to them. I followed the recipe EXACTLY, and was very dissatisfied. Maybe I'm just not used to as rich a cookie as this, but in my opinion, very mediocre.
