Goat Cheese and Arugula over Penne

I actually made this is a hot dish, sautéed the garlic in olive oil with the salt and pepper (I probably used about 4 cloves) and added about 3-4 cups of arugula and about a cup of spinach and then added the tomatoes. I let that sauté until the leaves wilted and then added the goat cheese and melted that until it covered the ingredients. When the pasta was done and drained, I added that to the sauce and made sure the sauce covered the pasta completely. This was really yummy on both the first day and heated up. Thanks for the recipe!

Parmesan Basil Tomato Soup

Delicious! I doubled the recipe and added one can of water and one can of half and half. I also added some gnocchi and a smattering of red pepper flakes. I also used olive oil instead of vegetable oil. This was really fast and really good. Thanks for the recipe!

Light and Fluffy Spinach Quiche

This was really delicious. My husband kept calling it gourmet. I used fresh spinach (for quantity, I just layered as much on as what seemed right, probably about 2 -3 cups. I also added cremini mushrooms, which were really good in this and about 1-2 tsps of garlic salt. I didn't use the extra egg added by other reviewers and it turned out great (maybe b/c I used fresh spinach), but it wouldn't have hurt it to add another egg either. Thanks for the yummy recipe!

Fresh Tomato and Basil Pizza

I took other reviewer's suggestion and added red onion. I also sprinkled the bottom of the pizza dough with garlic powder before adding the other ingredients. I'm not normally a fan of making my own pizza when you can get a great one delivered, but this is delicious. Thanks!

Chocolate Eclair Dessert

This is so easy to make and very good! I took other reviewers suggestions and melted my chocolate frosting in the microwave for 45 seconds (other ppl suggested 15, but I just poured it over top and immediately put in fridge). Delish! I needed one more package of graham crackers than called for. Thanks for the great recipe!

Spinach Manicotti

Delicious - in the middle of a bite, my husband said "this will be a perfect dish when we have company over." I followed the recipe exactly and the salsa was perfect. I followed another reviewers suggestion and just poured the remainder of the filling over the manicotti before adding the sauce to the top - it was perfect and not runny at all! Thanks!

Mexican Mole Sauce

Thank you so much for this recipe and to all the reviewers for the excellent modifications. My husband loves true mole and he said I did it. I did change it liberally in accordance w/ the other reviews, but still kept it simple. I used 2 tbsp cocoa powder; added an extra 1/8 of cumin; used one tbsp fresh cilantro; instead of green chiles or tomato soup, I used one 10 oz can of Rotel (tomatoes and green chiles). I also added 1.5 tbsp peanut butter; 1.5 tbsp cinnamon, a liberal sprinkling of cayenne pepper and then added 1/2 a rotisserie chicken, letting that sit in the sauce on low heat for about an hour, stirring occassionally. I then wrapped it in tortillas and covered it with mexican cheese and put it in the oven for 5 minutes on 350. I added avocado. Next time, I will make a separate batch of sauce to pour over, but otherwise, it tasted like true mole.

Shrimp Fettuccine Alfredo

This is one of the most successful homemade alfredo recipes I have ever made. My only suggestion would be separately sauteeing uncooked shrimp in a nice wine/butter/garlic sauce so the shrimp taste as rich as the rest of the dish.

Awesome Chicken and Yellow Rice Casserole

This was excellent. I didn't have pimentos or water chestnuts and added a can of Rotel as other reviewers suggested. I also used half a rotisserie chicken. It was excellent. Thanks so much.I also added about a tsp of red peppers that gave it a little heat, but not so much that anyone who wasn't overly sensitive to spice would notice.

Spinach Tomato Tortellini

I think I noticed too late that a lot of ppl that gave this really high reviews added something, meat or more cheese or something. And that is what it was lacking - something. Following the recipe exactly, it was pretty bland. I think some hot italian sausage would probably really improve it or try to follow one of the other reviewer's suggestions.

Baked Potato Skins

These were excellent. I used olive oil instead of vegetable oil and baked on 400. The potatoes must be baked before you start to make the recipe. I also left a little more potato in than the recipe called for. They turned out perfect. Thanks!
