Tina, I just found your post from JDRF on linkedin. I'm very interested in reading your comments on lowering insulin usage with diet. My 11-year-old T1 also has Celiac so I'm looking for gluten free meals.

Too much salt in the beef stew. Had to throw out the entire contents of the slow cooker.
