Mom of one wee little princess, Echo. Living in China for awhile. Love cooking healthy for my family. UPDATE: My litte princess passed away while in China, from complications caused by a hole in her diagphram we didn't know about. The doctors say she was born with it. Pray for us as we bring her home.

Three Bean Salad
I would have named this SWEET three bean salad. The spices were good, but it was too sweet and not vinegary enough for me. Second time I reduced sugar to 1/4 C and gave an extra splash of vinegar. This helped a lot.

Satiny Chocolate Glaze
Great recipe for a nice fast glaze. I also did the microwave method (45 sec, stir. 45 sec stir. Pour) and it turned out great. Looks beautiful and flavor was very good, but not the best. Only substitution was artificial maple syrup instead of corn syrup (it's mostly corn syrup anyway!) because it's what I had on hand.

Pineapple Zucchini Muffins
Cut the oil in half and substituted, of all things, pureed cantaloupe (it is what I had on hand!) left out a quarter cup of sugar and upped the spice a little by adding ground ginger - and as always I used WholeWheatWhite flour instead of reg. white
