Seafood Scampi Linguine

Reviewed: Feb. 1, 2004
This was such a great recipe! It was easy and delicious, too. I used the already cooked and peeled shrimp and added them just before serving. Also, I used olive oil instead of butter and it tasted great. Other than that, I followd the reciped exactly as written. I'll will definitly be making this again and again!

Smoked Oyster Spread

Reviewed: Jan. 15, 2004
This is an excellent dip even with just crackers. I added some of the oil to give it a little more of a smokey flavor, as suggested by other reviewers.

Dinah's Baked Scallops

Reviewed: Jan. 15, 2004
This came out great, my boyfriend loved it but I was not too crazy about the taste the wine gave it. I will add less next time.

Connie's Zucchini "Crab" Cakes

Reviewed: Nov. 9, 2003
I love this recipe. It really is a great way to use all of the leftover zucchini you get from your garden. I did dread the cakes in breadcrumbs instead of flour--they come out crunchy and delicious. Excellent recipe.

Beef Tenderloin Stuffed with Lobster

The sauce was really delicious. The meat was a little dry, though, next time I'll cook it for less time. Overall, a decent recipe.

Chicken Breast Cacciatore

Reviewed: Jul. 18, 2003
This was a quick and delicious recipe but I don't like to cook with a microwave, so I changed a few things: I used my own home-made tomato sauce, cooked with seasonings. Then, place the crumb-coated chicken in a lightly greased 9X13 dish. Bake at 350 degrees for about 45 minutes. Then put the sauce and plenty of mozzarella cheese on top, and bake for another 10 minutes. It was great.

Baked French Toast

This was a great and easy recipe. I also only used 6 eggs and only 1 cup of milk. Chopped pecans and syrup on top are a must! Yummy!

Aimee's Quick Chicken

Reviewed: May 11, 2003
I don't know what the others were talking about. This was a great recipe. I used honey mustard instead of dijon and honey teriyaki barbecue sauce instead of plain teriyaki sauce. But I also used only 4 oz of mustard on 6 whole chicken breasts and I think that helped the mustard not overpower. The chicken came out so juicy. I lightly greased the bottom of the pan and my "sauce" didn't burn at all. And I used real bacon crumbled up to lessen the salt content. This was perfect with pesto rice. This was an overall great dish!

Beef and Biscuit

Reviewed: May 11, 2003
This was great. I also doubled the recipe and put it in a 9X13 pan instead and it worked out well. I also used the Pillsbury crescent rolls for the top and bottom. It was like eating chili in a biscuit! I will be making this one again and again.

Cheddar Chicken

This was excellent! I used crushed Ritz crackers for an even buttery taste and it was perfect. I also added a little more cheese 10 minutes before it would be ready as suggested earlier. I will be making this one over and over!

Really delicious and easy recipe! Makes a lot of frosting, though; you could probably halve the recipe for the frosting and still have plenty of it.

These cookies are best when fresh. They don't stay moist for too long but they are so good the first couple of days after making them.
