Watermelon Rind Stir-Fry

I tried this recipe because it was so unusual. I am very glad I did. It was great but I had to make some changes 'cause of things on hand. I used canola oil instead of peanut oil & soy sauce instead of teriyaki sauce & it still was fantastic. Will try it next time with chicken strips stir fried first and served over rice. Hubby liked it also. Will help on the grocery bill also cause the rinds were always thrown out unless I was making watermelon pickles. Thanks for sharing.

High Five Orange Rolls

I tried this today and they were really good but I made some changes. First I cut the sugar to 1/2 cup (next time I may cut it down some more) I may also cut on the butter when I roll them up cause they did caramelize on the bottom when baked. I didn't add any butter to the frosting either. Just a little more milk and it was turned out real well. Trying to eat a little more healthy and still not give up the good stuff completely. They did make 18 rolls but I put them in 2- 9X13 pans & were still BIG rolls. Thank you for the good change from caramel rolls & I will be making them again. Glenda

Chicken Chimichangas with Sour Cream Sauce

First time I tried anything like this and was rather skeptical but my husband really liked them. I did also but I left out the cayenne pepper and only half as much green chilies cause I'm not big on hot, spiced foods. Will make them again but will try baking them instead of deep frying.
