Shrimp, Sausage, and Fish Jambalaya

Great dish. Makes a ton of food and freezes well. I didn't find andouille so I used spicy Italian pork sausage instead - turned out great. I used langoustine tails instead of shrimp because that's what I found freshest at the store. Cod isn't my favorite fish so I might skip it next time and focus on the sausage/shrimp combo. Also, I had to add almost two cups of water before adding the fish and seafood...it was drying out too fast and the rice got a little too mushy.

Truly Coconutty Cream Pie

Delicious pie. I bought a refrigerated pie crust, however, and pre-baked it myself - I didn't make the actual pie crust from scratch.

This dish took much longer to cook - those quantities are large even for a large skillet. I could tell it would be bland so I added seasonings as I went. This is a nice simple dish when you don't want to complicate things.

Garlic Green Beans

Super easy side dish to add to the repertoire. I like my green beans less soft so I may use fresh ones next time and less butter to make the recipe healthier.

Fish Roll-Ups

These were wonderful! Great seasoning and quite easy to make. I used Fritos instead of round crackers because I had some left over that I wanted to finish up and they were a great call. My husband loved the crunchiness and flavor. My oven's a little slow/light so I cranked these up to 400 degrees instead towards the end, added 5 minutes to cooking time and removed the foil for the last 5-10 mins to give them a little push.

Irresistible Pecan Pie

Love this recipe. My only adjustments are: 1. I take the pie out of the oven a few minutes early because otherwise it tastes a bit overdone. 2. I use a pre-made, refrigerated crust to cut down on time.
