I tried something similar in Santiago de Cuba once, is a very traditional thing to use green plantain in most parts of the caribbean. I recommend to use the not very-green plantains (but not overripe plantains either), as the way they are used in Mexico not in Cuba, because this way are a little bit sweeter.

Daisy Brand Sour Cream Chocolate Cake

I DIDN´T CARE FOR THE CAKE PART, BUT THE FROSTING IS SO GOOD. I HAD DOUBTS WHEN I START MIXING THE SUGAR POWDER WITH THE BUTTER, BECAUSE IT START TO LOOK LIKE CRUMBLES, I THOUGHT IT WAS TOO MUCH SUGAR, AND AFTER ALL, I DON´T LIKE SWEETS TO BE THAT SWEET, I REDUCE THE AMOUNT OF SUGAR, AND IT TURNS OUT GREAT. I RECOMMEND TO WHIP THE CREAM BEFORE ADDING IT TO THE BUTTER, IT MUST BE REALLY COLD, AS IF YOU MADE YOUR OWN WHIPPED CREAM

MINE STUCK TO THE PAN AND CRUMBLE A LOT, I HAD A REALLY BAD TIME ASSEMBLING IT NICELY, I MADE IT FOR A BIRTHDAY PARTY, I FINALLY MANAGED TO MAKE IT A NICE CAKE, AND THE FLAVOR WAS GREAT, MOIST, JUST A VERY GOOD CAKE, EVEN WITH ITS LITTLE PROBLEMS.

Osso Buco

Never tried before osso buco with celery, i recomend not to put any on it, I think is not the kind of flavor you want for this dish. The rest its ok, pretty good recipe to follow specialy for beginners in osso buco cooking.

great!!! just simple modifications: add half teaspoon nutmeg, one teaspoon cinnamon and half cup (or more if you want) of not sweetened cranberry raisins or grape raisins or a mix of raisins

Baklava

I use 1 cup nuts, half cup pinenuts and half cup pistachios to make Baklava. Instead of layering the cakes, I extend dough up to a square yard long and buttered all the surface, then toss over the nuts with cinnamon and roll up, cut the roll into small rolls and then bake.
