Mile-High Peanut Butter-Brownie Pie

I used mini Reeses cups, chopped, in the brownie mix. Next time I'll use real whipped cream. This pie was the hit of the holiday, thank you!

Chicken and Rice Soup II

I had chicken rice soup in mind today and found this wonderful recipe. Had to change a few things based on what was on hand. No frozen veggies so used 1 zucchini, 2 carrots, 2 celery, 1/2 onion, 1/2 lemon (squeezed juice), added 1/2T basil, 1T thyme, 1 clove garlic. The rice soaked up most of the broth so added 4 additional cups of water + 2 cubes of MSG free chicken bouillon. Perfection! My new favorite. *thanks*

Jay's Signature Pizza Crust

Poor Man's Fried Rice

I stirfried chopped green pepper in the sesame seed oil till tender then added frozen peas and carrots. Once the veggies looked good I added the rice and soy sauce. I scrambled the eggs right in the mix and it turned out delicious! Will make this often.

Delilah's Frosted Cut-Out Sugar Cookies

I used half butter, half regular shortening and the dough did turn out too soft and hard to move. So I rolled the dough between two sheets of parchment, then placed the cutters on the dough and removed the excess dough from around the outside of the cutters. I didn't have to mess with transferring the dough, just moved the parchment paper onto the cookie sheet. Perfect looking cookies everytime and our new favorite recipe!

I am sure I've had this at a restaurant before and am so happy to have this recipe. This is a definite keeper at our house! Great with monterrey shredded on top, cornbread and a green salad.

Salmon Chowder

We use our leftover salmon or trout to make this fantastic chowder on a regular basis. I also subsitute a few ingredients: 1/2 tsp. choppped garlic instead of garlic powder and unskinned cubed red potatoes add a little color. A definite favorite in our house, even the toddler loves this one.

Ground Turkey Soup

I substituted a vegetable based bouillon, rendering a surprisingly delicious pot of soup. Sadly, I forgot the barley and it didn't dawn on me until I was two bowls into it. Even so, this recipe really hit the spot on a rainy day.
