Spanish Flan

EXCELLENT recipe. I've tried so many other flan recipes and this one tops them all. I have already made it three times for potlucks and I keep getting asked for the recipe. I can't believe how easy and few ingredients it took to make. My boyfriend asked me to make one for a family dinner and another for himself!!!

Easy Steam Chicken

I thought this was pretty good. I omitted the salt completely and just added a pinch of it while it was steaming. What is the point of rubbing it in salt and rinsing, anyway??

Slow Cooker Mediterranean Stew

You know, I really think this is D-lish. I am not a big okra fan so I just left it out. The flavors are awesome and I added a few more raisins than what the recipe called for. For those other reviewers that didn't like the taste, you have to remember, this is MEDITERRANEAN stew, not AMERICAN stew. If you don't like ethnic foods- you won't like this but for those who can appreciate the flavors, it's awesome. I would definitely make this again.

Curry Pumpkin Soup

FABULOUS.. I can't believe I made something so great tasting and easy to prepare. I used chicken broth instead of vegetable and I used heavy whipping cream instead of half and half. The way to give it a kick in flavor is either to add more curry or just more salt. I also put in a little more sugar and it really tasted fantastic and I will definitely make this's an awesome "comfort" food on a cold fall afternoon.

Sour Cream Chicken Enchiladas

I rarely give anything a five star but overall this was fabulous. It was so hearty and delicious. I let my boyfriend have some and he loved it and asked to take some left overs with him. (which he rarely does) This one is a keeper. I love cilantro so the cilantro cream sauce was awesome. I will make this again. For a complete meal goes excellent with Spanish Flan for dessert on this Web site.

Wilted Spinach

Don't let the name fool you, this "steamed" spinach had a wonderful taste. Very Middleastern flavor that I love. I didn't have pine nuts on hand, and I realize that is why the recipe is high calorie. Left it out and it was still great. It's very easy and quick to make.

Rose Petal Pound Cake

Excellent. I loved it. Great new taste. Very nice with tea. I would use a little more rose water because I think the taste was very subtle and I love the flavor combination with almond extract. Also the pink color was very light I may use a few more drops next time to really bring out the color. It's easy and very delicious and did not last long. I will certainly make this again.

Absolutely Sinful Chocolate Chocolate Chip Cookies

They weren't awful but just below average. I didn't care for the cake like cookie. I expected it to be better. It would be great if it was like the Award Winning Soft Chocolate Chip Cookies by Debbi Borsick on this site. Now that is an awesome chocolate chip cookie.

Tzatziki VII

This was awesome. It is a bit time consuming but only because you have to let the yougurt drain for a few hours. After that is ready, it's easy and very tasty. The recipe asked for lemon juice but the directions said vinegar. I just used the lemon juice. I dipped pita bread into it as a snack or appetizer, it's great. My Middle Eastern friend's family eats this frequently and he said mine turned out great.

Garlic Cheese Biscuits

Well, the bottoms of my biscuits keep burning before they are ready. Does anyone know why this happens? This recipe was good but I had higher expectations due to the rave revues. I am not sure I will try it again. I did put the garlic powder in the batter first.

Easy Yummy Chinese Chicken Salad

It was okay. I would have preferred a sweeter dressing as well. The dressing was just okay, on the bland side. I added canned mandarins to wake up the flavor along with some chow mein noodles to give it a crunch. Was pretty good but I've tried other chinese salads that had more of an oriental flavor.

This recipe is basically fail proof. I didn't have as much pine nuts on hand as the recipe asked for but it still was very good. I would definitely use more pine nuts next time and I will use this recipe again.

Fruit Pizza with White Chocolate

This was ABSOLUTELY AWESOME. I highly recommend to use fresh fruit, not canned. I bought the pinneapple already cut in it's own juice and though it may be a bit more expensive, it's definitley worth it. Also, I used Ghiradelli white chocolate chips and it was wonderful. The only problem I had was with the glaze it wasn't as thick as I thought it could have been so I only used a little bit because I didn't want the crust to be soggy. I would definitely use this one again.

Sweet Mexican Corn Cake

This was absolutely delicious. I followed the recipe exactly without any modifications. This is corn "cake" NOT corn "bread" so it's supposed to be a little soupy. Also, use FRESH corn kernals as the recipe states. Yes, this means I used 4-5 corn long corn ears and shaved the kernals off the cob. If you use canned or frozen corn..may be why turned out soupy or didn't turn out at all. Follow this exactly and it will be perfect. I usually can tell if the recipe will taste good if the batter tastes good and wow, I knew this would be a winner.

Almond Carrots

I didn't care for this too much. It seemed like it would be tasty because I love carrots and almonds but the almond extract was too bold. It may have been because I used imitation almond extract instead of pure. The onions and almond extract is a poor combination. I didn't much taste the oregano in this recipe and if I had left it out, it probably would have tasted the same. I won't be making this again.

Kale, Swiss Chard, Chicken, and Feta Salad

This was delicious. I thought the vinegar was fine, be sure you use apple cider vinegar. I substituted the walnuts for candied walnuts, goes great with the feta and raisins. Next time I may try dried cranberries. I like that this is a nice change from the usual romaine lettuce, getting plenty of leafy greens..makes it for a hearty salad chock full of nutrients.

Mediterranean Chicken with Pepperoncini and Kalamatas

This was awesome!! I though the flavor was perfect and it had a "kick" to it, from the pepperoncini. It deserves 5 stars because I didn't have to do anything different to tweak it, it was easy to prepare and delish! This one is a keeper.

Picadillo de Platano

This hit the spot!! I decided to double the recipe (all expcept the plantains) so I can use all the ground beef. It didn't seem like it was enough beef but then the title did say "Platano". Next time, I use more plantains. I can see why the previous poster added bell peppers and cumin. I think I will try that next time. Don't skimp on the cilantro, in fact, add a little more. Cilantro really brings out the flavors in this dish. I will certainly try this again, maybe serve it with white rice.

Absolutely Fabulous Greek/House Dressing

I only give 5 stars to recipes I absolutely love and want to impress others. It does have a kick to it, the vinger, but too acidic. Next time, I will try balsamic vinegar isntead to give it a sweeter taste since I don't like to use sugar in my cooking. It was tasty and great to have on hand since I do not buy bottled salad dressings from the grocery shelves since most contain too many preservatives and sugar. I will use this again but it wasn't GREAT, but good.
