Tom Ka Gai (Coconut Chicken Soup)

Excellent recipe. I fell in love with this soup at a local Thai restaurant and I think this is just as good. I followed the advice of some of the reviewers and I added the sugar. I ended up using a 1:2 ratio of fish sauce to sugar. Yep, I had 8 Tablespoons of sugar but man, it made the difference. Generally, Thai food does have sugar in it's dishes. I loved it and I did add the lemongrass. I would like to add next time, the kiffer leaves and galanga to make it more authentic. I also did not include the tumeric because this soup should be white in color, not yellow.

Tangy Slow Cooker Pork Roast

This was perfect exactly how the recipe stated. The only thing I did different was cook the pork loin (I used chops, not roast) on low for about 6 hours and it was so so tender. I don't use ketchup,ever, so I substituted teriyaki sauce and it was perfect.

Harvest Rice Dish

I thought this was excellent. I think it was too many onions, though. I only used 2 onions and it still seemed like a lot. I cooked the brown rice and wild rice separately since cooking times vary, then just combined them afterwards, no problem with uncooked wild rice. Very delicious recipe I will keep.

Wilted Spinach

Don't let the name fool you, this "steamed" spinach had a wonderful taste. Very Middleastern flavor that I love. I didn't have pine nuts on hand, and I realize that is why the recipe is high calorie. Left it out and it was still great. It's very easy and quick to make.

Absolutely Sinful Chocolate Chocolate Chip Cookies

They weren't awful but just below average. I didn't care for the cake like cookie. I expected it to be better. It would be great if it was like the Award Winning Soft Chocolate Chip Cookies by Debbi Borsick on this site. Now that is an awesome chocolate chip cookie.

Antipasto Pasta Salad

This really was an excellent recipe. I left out the olives and it was wonderful. Don't substitute any of the cheeses. The only hard part was chopping the salami and sausage other than that I will make this again.

Colorful Corn Chowder

This was very good, I wouldn't say it was awesome but I would probably tweak it a bit to change the recipe to make it tastier. I think real potatoes, instead of potato flakes would make it better.

Cabbage Burgers

It wasn't awful, but it was pretty bland. If you have to keep changing it by adding your own spices and other ingredients, it is not the same as the original reicpe. I had trouble with the dough, i used pizza dough, is that why?? And I had tons of the filling left over. It does have potential, but you have to tweak the recipe too much to make a difference and so, what's the point? I prefer recipes you don't have to change much.

Restaurant-Style Tequila Lime Chicken

I read every single review before attempting this recipe. #1- follow the recipe as is, when you all try to change things your way, you mess it up, no wonder some of you didn't care for it. #2- don't cheat and use ranch dressing with salsa from a jar. I really try to cook with fresh foods from scratch and it makes my skin crawl when people use stuff from jars or cans when you don't have to. I did marinate the chicken overnight. Also, I used Wasabi Mayo instead of regular, to give it an extra kick. Delish!! For you all on the West Coast, you can find this at Trader Joe's. Also, the tequila must be at least 1/4 cup, more if you like. Think about it, 1/4 tsp for four people??? This was super delicious and by all means use low fat versions of sour cream, mayo, etc... to cut back on calories because the calories alone per serving almost made me not make it. It's not too time consuming but definitely plan in advance for this one so you can marinate overnight. This was a huge hit at my dinner party-- I almost didn't want to share the recipe and said it was a family secret, but I couldn't lie. I served this with the hominy and cheese bake in this site. Enjoy.

Slow Cooker Adobo Chicken

AWESOME! I loved it. Next time, I will only use chicken breasts. Also, I used Balsamic vinegar and tweaked it with 1 cup of white wine!! YUM!!

Zesty Hominy and Cheese

This is incredibly easy and so delicious. I will certaily make it again, you are guaranteed not to have any leftovers. By the way, if you've never had hominy before, the texture may throw you off but it really is a great recipe.

Absolutely Fabulous Greek/House Dressing

I only give 5 stars to recipes I absolutely love and want to impress others. It does have a kick to it, the vinger, but too acidic. Next time, I will try balsamic vinegar isntead to give it a sweeter taste since I don't like to use sugar in my cooking. It was tasty and great to have on hand since I do not buy bottled salad dressings from the grocery shelves since most contain too many preservatives and sugar. I will use this again but it wasn't GREAT, but good.

Spicy Slow Cooker Black Bean Soup

I wouldn't say it's the THE BEST, but I am going to try some others. I cooked mine on low setting for over 8 hours. I addes cilantro, 2 bay leaves and fresh garlic to the recipe. Also, it's great to add half and half or sour cream after it's done, it will have a nice creamy texture. My beans were not hard, I soaked them for a day and half. It was really good, just not great.

Paul's Pumpkin Bars

Overall, this was very very good. Got lots of compliments from co-workers and friends. I even gave out the recipe to a few people. The only disappointment was that it did taste like cake and not bars. I was trying to stay away from making a cake. The name of this recipe should be changed to "cake". It was incredibly moist and the frosting was delectable. It was hard to just eat one piece. Loved it!!

Slow Cooker Mediterranean Stew

You know, I really think this is D-lish. I am not a big okra fan so I just left it out. The flavors are awesome and I added a few more raisins than what the recipe called for. For those other reviewers that didn't like the taste, you have to remember, this is MEDITERRANEAN stew, not AMERICAN stew. If you don't like ethnic foods- you won't like this but for those who can appreciate the flavors, it's awesome. I would definitely make this again.

Broccoli Salad I

I only gave it a 3 because I ended up modifying this recipe quite a bit. To cut back on fat and calories, I used BACOS instead of bacon. I also used dried pinneapple and red grapes but cutting them in half like other suggestions and I also added shredded sharp cheddar cheese. It came out like a new recipe but it was delish. I guess I didn't know I had it in me to be so creative.

Zucchini Patties

These were wonderful!! It's really hard for me to get my 5-A-Day veggie requirements but with this recipe, I look forward to eating my veggies. My mom is picky and critical when it comes to other people's recipes and even she ate these with no complaints!! If she loved them anyone else would.

Caramel Shortbread Squares

I only gave it a 3 star but was hoping for a 5 star turnout. I made this from the AllRecipes cookbook and boy were the directions way off!! My caramel was more like a hard toffee, but my crust turned out wonderfully. The chocolate didn't melt like I hoped but next time I think it's better to review the online recipe rather than the cookbook. Someone did comment that for a recipe that didn't turn out the way it was supposed it, it still tasted great.

Coconut Macaroons III

Ths was pretty easy to make and tasted pretty good. I was looking for a softer outside, it came out a little to crunchy..also, try to use more recent bought coconut flakes, I had a bag of this stuff in the pantry for a while and used it but it had a little stalely taste to it. I would make this again.

Old Fashioned Chocolate Cake

I have to say this is the ONLY chocolate cake recipe I will ever need. I don't like chocolate cake but this is AWESOME. This is what I did, and I suggest you all do the same. I made the cake per instructions, except I omitted the cinnamon. I did not make the icing because I was looking for a basic chocolate cake recipe from scratch in order to make Better Than Sex Chocolate Cake II from this site. My advice is to combine these recipes. The Better Than Sex Chocolate Cake II asks to use a box of the devil's food cake mix but I'm a cake snob and will only make it from scratch. Follow the directions and you will have a truly AWESOME cake that, I have to admit, really did turn out better than sex. (You can read my review for that one as well). Refrigerate it first and it will be a hit and I believe everyone will absolutely love it.
