Texas Coleslaw

Awesome coleslaw if you don't like traditional slaw that is too sweet. It definitely has a kick..more like a punch.. so if you don't want to feel the after burn in your mouth try 1/2 tsp of cayenne, instead. Absolutely loved the cumin and that's what makes this recipe. I substituted sour cream and greek yogurt for the mayo. I don't like mayo and next time will probably just sub the yogurt but because I had sour cream I needed to use up I included that. I will use this again in the summer when we start to BBQ again. Yummy and thanks for posting!

Sweet Mexican Corn Cake

This was absolutely delicious. I followed the recipe exactly without any modifications. This is corn "cake" NOT corn "bread" so it's supposed to be a little soupy. Also, use FRESH corn kernals as the recipe states. Yes, this means I used 4-5 corn long corn ears and shaved the kernals off the cob. If you use canned or frozen corn..may be why turned out soupy or didn't turn out at all. Follow this exactly and it will be perfect. I usually can tell if the recipe will taste good if the batter tastes good and wow, I knew this would be a winner.

Kale, Swiss Chard, Chicken, and Feta Salad

This was delicious. I thought the vinegar was fine, be sure you use apple cider vinegar. I substituted the walnuts for candied walnuts, goes great with the feta and raisins. Next time I may try dried cranberries. I like that this is a nice change from the usual romaine lettuce, getting plenty of leafy greens..makes it for a hearty salad chock full of nutrients.

Coconut Lentil Soup

This is awesome. It definitely hit the spot while I was craving a warm hearty soup on this cold rainy and windy day. It's perfect on a Sunday night watching football and cozying up to this soup. I wish I had made basmati rice with it but instead I poured myself a glass of white wine and heated a crusted artisan roll with butter..mmmmm. it doesn't get better than this. Oh by the way, I did add salt and used coconut milk instead, also what really added flavor was a teaspoon of Garam Masala and it was perfect.

Zucchini Brownies

These brownies are FAR from healthy. Probably very unhealthy minus the zucchini. Almost 3 cups of white sugar, white flour, margarine and veg oil. I suppose you can make your own substitutions to make it more healthy but then it would completely change the recipe. All this is is a basic brownie recipe with some zucchini in it all the other ingredients cancel the healthy zucchini. Sorry, but not making this again.

Peppered Cilantro Rice

I did like this recipe and will be using again. I substituted 1 cup of chicken broth rather than one of the two cups of water. I I can see how it would taste a little bland so next time I may use cumin as other reviewers recommended. I don't think 2 TBSP of cilantro is enough, I put in way more than that and by looking at the picture I'm certain there was more. The recipe title says cilantro and only 2tbsps? I think I ended up putting at least 1/4 cup.

Port Wine Chocolate Cake

I LOVE this cake. Yes, it's takes some work but it's well worth it. I will not even consider a recipe that uses boxed cake mix. If you follow the directions it will come out great. It is necessary to keep your mixer on the full 5 minutes just as the directions say. I don't understand reviewers who don't follow directions and then end deducting stars. I ended up making mini bundt cakes and gave them out as gifts. Mine turned out moist and the only thing I did different was use bittersweet chocolate for the glaze rather than unsweetend. Delish and I will certaily be making this again.

Chewy Caramel

CAUTION: This is totally addicting. Made it while I was watching Biggest Loser. Go figure...when I tasted it....OMG..this is soooooooooo yummy. I heated mine up to 248 degrees and it was able to come to a boil at medium heat. I did not put it in the fridge but let it set on parchment paper overnight. I also had trouble peeling off the parchment paper but I used a blow dryer to soften up the caramel and the paper peeled off much easier, just be patient but totally worth it. Don't ever use maragarine this has to be made with butter. And, I did use two piches of salt and they came out perfect. I am going to use these caramel pieces to make a caramel pecan pie, from this site. Thanks for submitting!!

Golden Rum Cake

For those of you fortunate enough to have a Trader Joes' in your area, I used the TJ's Meyer Lemon Cake & Baking Mix because that was all I had on hand. It's a 16 oz. cake mix but worked fine in this recipe. Also, instead of water I used Coconut Milk and I ended up using Appleton Estates Rum for both the glaze and the cake. I think I now know the difference between using granulated sugar and powdered sugar. Use granulated sugar to get a clear, glossy glaze, one poster may have used the powdered sugar which will give you a more thick white glaze. I prefer granulated. This was a HIT. I also poured half the glaze on the bottom of the bundt pan and poked holes all over, top, bottom and sides, like a crazy woman! The cake turned out perfectly infused with a combination of flavors of lemon, rum, and a hint of coconut which ended up being a very nice and light rum cake perfect for Spring.

Coffee Ice Cream Fudge Cake

I'd give this recipe a 10 star!!! This was AWESOME, instead of coffee ice cream I used chocolate. Afraid it may turn out too sweet, I subsituted 60% cocoa chocolate chips for semi-sweet and it was perfect! Also, I thought putting it under a broiler might melt the ice cream too quickly so instead, I used a flame torch (used for creme bruele) on the marshmallow. I ended up not using the marshmallow cream, didn't need it. I knew it was a keeper after I tasted it and someone told me it was good enough to sell.

Mediterranean Chicken with Pepperoncini and Kalamatas

This was awesome!! I though the flavor was perfect and it had a "kick" to it, from the pepperoncini. It deserves 5 stars because I didn't have to do anything different to tweak it, it was easy to prepare and delish! This one is a keeper.

Chocolate Eclair Cake

I'm giving this recipe a 5 star rating because it's quick and easy to prepare and everyone loved it. My personal preference is to NOT use artificial canned, boxed ingredients because it's not good for you. I almost cried when I saw that the frosting's first ingredient is high fructose corn syrup. eeek!! However, I needed to prepare something quick that would be sure to please and this did it. I think I will try the other recipe on this site because you make the frosting from scratch and that's much better. It's definitely a keeper for last minute dessert.

Best Korean Bulgogi

I really thought this was delicious!! After reading all the reviews I decided to add 1/2c sugar to the recipe which may seem a lot but mine didn't turn out salty. I marinated overnight and I also used the remaining of some "cheap" soy sauce (Kikoman) and the rest of San-J. Is this a good brand? I think one poster had a good point and may be the quality of the soy sauce. So I will be making this again, I loved it because it was easy and very delish!!

Picadillo de Platano

This hit the spot!! I decided to double the recipe (all expcept the plantains) so I can use all the ground beef. It didn't seem like it was enough beef but then the title did say "Platano". Next time, I use more plantains. I can see why the previous poster added bell peppers and cumin. I think I will try that next time. Don't skimp on the cilantro, in fact, add a little more. Cilantro really brings out the flavors in this dish. I will certainly try this again, maybe serve it with white rice.

Elegant Chicken Athena

Overall, I would have given this 5 stars but whenever I have to tweak a recipe then it loses one star. I didn't really taste the pomegranate in the sauce. I think next time I will add more of the syrup. I found Pomegranate Glaze at Trader Joe's. If I need to have true syrup, I'd probably go to a Middle Easter market to find it. It was a bit strong on the wine but I loved it. I was hoping for a sweeter taste. I will definitely make this again and I will try it with pork chops like another reviewer recommended. The chicken breast was moist, but a bit dry. I served this over basmati rice and found it to be a wonderful dish. I may add just a dash of salt to the suauce.

I thought this was pretty good. I omitted the salt completely and just added a pinch of it while it was steaming. What is the point of rubbing it in salt and rinsing, anyway??

Authentic Thai Cashew Chicken

This was good but there's nothing "Thai" about it. All it is is really good stir fry. If the recipe was called Chinese Chicken Stir Fry, it I wouldn't have expected anything different.

Veggie Griddle Cakes

This was just okay. Not very "veggie" considering there is only bell peppers and onions. It tasted good cold the next day. I added grated fresh parmesean cheese and it was better. If you want a heartier veggie patty, try the zucchini patties on this site. I've rated that one as well and gave it 5 stars.

This was very tasty. It was a bit on the soury side but it's a great alternative to regular salad dressing. The flavor is very authentic. For those of you who can't find Sumac,go to a Persian or Middle Eastern market. The Indian markets should carry it as well.
