Baked Potato Soup I

This is very good, quick and easy to prepare. I did add some tarragon for additional flavor, and would recommend trying a pinch.

I made the mistake of trying these in mini muffin tins. The bread took over half of the room....making the 'quiches' very dry, and more like scrambled egg on bread. The dog liked them, though. Wouldn't make again.

Chiles Rellenos Pie

Muy Bueno! I made it in a pie crust and also added some roasted red bell peppers for color, and minced onion, and used grilled chicken breast meat. Will definitely make again.

Best Italian Sausage Soup

We love Italian Sausage, and this is a wonderful way to fix it. I made it in the crock pot using half hot and half mild browned sausage and just served over spiral pasta. Did not have any zucchini on hand so used celery and carrots instead...and added a small can of sliced black olives. It was delicious and will definitely make again.

Slow Cooker Pepper Steak

This was easy and delicious...but being a Texan, I added a couple chopped jalapenos, some cumin and cilantro for some additional zip and flavor. Will definitely make again.

Chicken Chili I

This recipe is also very good with leftover turkey. I cut back on the oregano and added some cayenne, a little cilantro and coriander to the other ingredients spice wise. When adding the chicken/turkey I also add 1/2 c of tequila for more of a southwestern flavor. Making a roux of butter and flour adding slowing before serving will thicken it up nicely. Topping with some fresh chopped tomato, fresh cilantro and chopped red onion is perfect. We call this 'White Chili'.
