Bacon Cheddar Deviled Eggs

I have made these three times already. They are tasty as heck. I love the crunchy bits of bacon so much. I don't even want to make regular deviled eggs anymore! Just to make the filling a little looser, I added a little splash of white vinegar.

Ground Beef Enchiladas

The weirdness of this recipe intrigued me. So I tried it! I love the cheese sauce. I used sour cream, no yogurt. This recipe took care of my enchilada craving perfectly, thank you!

Mom's Coleslaw

Perfect recipe, just what I was looking for! Nice and simple to go with the pork we have been smoking for the past 13 hours. We ate much pork and much coleslaw just now. Time for a nap, LOL.

Mexican Style Shredded Pork

I discovered this recipe last week and I have made it twice since last week. For two people. That's a lot of pork per person. SO GOOD. I do a couple of little personal twists to this recipe. I have to buy the chipotle peppers in adobo sauce and then use the food processor on them, because I cannot find the "chipotle sauce". S'OK, I love that flavor any old how. When the pork is done cooking, I strain the fatty sauce goodness that accumulated in the slow cooker. I add lime juice to it, and then I pour about half of my newly made sauce over the pork. It absolutely does taste better the next day. If you have the will power to do so, shred it, leave it alone, then re-visit it tomorrow. When tomorrow comes, take it out of the fridge and fry it up in butter to get that carnitas-y crispy goodness. I love this stuff. I posted three pictures of it on here already, ha!

Marinated Grilled Shrimp

This marinade was delicious! I used double the marinade for about 2 pounds of shrimp just because of reading all the reviews that said it wasn't very strong-tasting. That worked well because I boiled down the extra marinade and we brushed it on the shrimp as they grilled. The weird mix of ingredients works very well together, I know it looks strange. But with 1,465 reviews (mostly positive), you know it's something you should try making. Right? So make it!

Seven Layer Taco Dip

Oh man! The taco seasoning mixed with the beans is such a great idea. I also love the creaminess of the cream cheese and sour cream. (Although, when I doubled this recipe, the sour cream/cream cheese amount was HUGE.)

Beef Enchiladas II

The tortillas got a little soggy during baking. Gotta think of a way to fix that. Also, make sure to season the beef with all your favorite chili powders, garlic salts, seasoned salts, etc. and taste the beef before rolling it up in the tortillas. Hey, it was a really tasty and simple recipe if you ask me. Thank you for posting it!
